Pancakes, whether sweet or savory, are a great way to start your day. All you need is a basic batter or flour, eggs, and milk to get you started. You can make so many changes depending on the flour you’re using, omit eggs, and use non-dairy milk if you want. Sweet pancakes are easy to make - top them up with chopped fruit and a generous drizzle of pure maple syrup. Savory ones can add smoked salmon, avocado, or even poached eggs. Even vegetables can be added to the batter! Here are some recipes that you can refer to to get you started on your pancake journey!
Korean Pancakes (Yachejeon)
Ingredients:
- 130 gm all purpose flour
- 2 tbsp cornstarch
- 1 tsp garlic powder
- 240 ml cold water
- 120 gm grated and drained zucchini
- 95 gm grated and squeezed carrots
- 15 gm thinly sliced green onion
For the dipping sauce:
- 2 tbsp soy sauce
- 1 tbsp rice wine vinegar
- 2 tbsp water
- 2 tsp sesame oil
- 2 tsp maple syrup
- 1 minced garlic clove
- ½ tsp sesame seeds
- 1 tsp chopped green onion
Instructions:
- Add all the dry ingredients in a bowl, then add the cold water to this. Whisk until just combined.
- Then add all the prepared vegetables and coat them well with the batter.
- Heat a non-stick pan and add a dash of neutral oil.
- Scoop the batter and spread it all over the pan as thin as you can.
- Cook one side for 4 to 5 minutes until it turns crispy and golden brown. Then flip and repeat the process for another 3-4 minutes.
- Do this till you run out of all the batter.
- Serve hot with the dipping sauce. All you have to do is add these ingredients in a bowl and give them a mix.
Healthy Chocolate Chip Pancake Recipe
Ingredients:
- 90 gm rolled oats
- ½ tsp baking powder
- ½ tsp baking soda
- 1 egg
- 1 ripe banana
- 2 tbsp hot water
- 2-3 tbsp chocolate chips
Instructions:
- For this healthy chocolate pancake recipe, add rolled oats, baking powder, baking soda, egg, banana, and hot water in a food processor and give everything a blitz.
- You can also do this step by hand if you don’t own a food processor.
- Brush your pan with some olive oil, and ladle the pancake batter on it. You can make pancakes as small or as large as you like.
- Once the pancakes begin to fluff up a little and have bubbles, decorate with chocolate chips and then flip to cook the other side.
- Alternatively, you can also fold the chocolate chips into the pancake batter.
- Once you have your stack of pancakes ready, enjoy them with some butter and pure maple syrup.
Besan ka Chilla
Ingredients:
- 120 gm besan (gram flour)
- ½ tsp ajwain (carrom seeds)
- ¼ tsp turmeric powder
- ½ tsp red chilli powder
- 40 gm chopped onion
- 1 chopped green chilli (optional)
- 2 tbsp chopped coriander leaves
- 1 tsp grated ginger
- Salt
- 118 ml water
- 1-2 tsp oil per chilla
Instructions:
- Add besan and the other dry ingredients in a large bowl and mix.
- Then add the chopped onion along with chilli, coriander leaves and ginger. Besides onion, you can also add vegetables like tomato, grated and squeezed carrots, beetroot, and zucchini.
- Add water little by little to get a chilla batter. You need a pourable consistency that gives you the perfect chillas.
- Heat a pan and add oil to it. Once the oil is warm enough, spoon a generous amount of batter and spread it across the pan.
- Let the chilla cook on both sides.
- Serve with some green chutney or even ketchup.
Healthy chocolate pancake recipe with Ragi
Ingredients:
- 30 gm ragi flour
- 15 gm whole wheat flour
- 45 gm jaggery powder
- 1 tbsp cocoa powder
- 90 ml milk
- 1/4 tsp baking powder
- 1 egg
- 1 tsp vanilla extract
Instructions:
- Sift the ragi and whole wheat flour with cocoa powder. Then add baking powder and jaggery to this.
- Crack the egg in a separate bowl and beat it with the milk, then transfer it into the dry ingredients.
- Don’t forget to add the vanilla extract as well.
- Let the batter sit for 5-10 minutes, then, make the pancakes on a hot pan.
- You can omit oil if using a non-stick pan.
- Once done, serve the pancakes with some pure maple syrup or honey, and some chopped seasonal fruits.
