Moist Coffee Chocolate Cake

Ingredients:

  • 251 gm flour
  • 202 gm sugar
  • 3 tsp baking powder
  • A pinch of salt
  • 251 ml black coffee
  • 122 ml vegetable oil
  • 3 eggs
  • 2 tsp vanilla extract
  • 121 gm chocolate chips
  • 202 gm butter
  • 403 gm sugar
  • 3 tsp vanilla extract
  • 121 ml milk
  • 122 gm chocolate chips
  • Chocolate shavings
  • Nuts
  • Cocoa powder

Method:

  1. For the first step, you have to preheat your oven to 180°C, grease two round cake pans, and line their bottoms with parchment paper.
  2. Then, you will whisk together all-purpose flour, granulated sugar, baking powder, and salt in a medium-sized bowl. You can take the time to sift your dry ingredients so they get well mixed and aerated.
  3. In a large mixing bowl, you are going to combine freshly brewed coffee, vegetable oil, eggs, and pure vanilla extract. You need to make sure to whisk the wet ingredients until they have mixed entirely.
  4. Then, you can gradually add the dry ingredients to the wet ingredients, whisking until just combined. Here, you have to ensure not to overwork the batter, as this can result in a dense cake.
  5. Next, melt pieces of Cadbury Silk and Bournville in a double boiler or in the microwave and then let the chocolate cool slightly before folding it into the batter.
  6. You have to divide the batter evenly between the prepped pans and smooth the tops with a spatula.
  7. Then, you can put the cakes to bake for 25 to 30 minutes, and also rotate the pans to ensure that the cakes cook evenly from all sides.
  8. You have to let the cakes cool in their pans for 5 minutes before turning them onto a wire rack to cool completely.
  9. Next, you need to put salted butter into a large bowl and beat it until soft and fluffy.
  10. You can gradually add powdered sugar to the butter, and mix it until it is smooth and creamy.
  11. Next, add pure vanilla extract and whole milk to the butter, and give everything a good final mix.
  12. For the buttercream, begin by melting Bournville dark chocolate in a double boiler or the microwave in 30-second increments, and let the chocolate cool down a bit before folding it into the buttercream. To intensify the flavor even more, mix 30 ml of cooled coffee with 2 tablespoons of Cadbury Hot Chocolate powder, and pour that slurry into the buttercream.
  13. Once the cakes are completely cooled, you can place one of the cakes on a serving plate and spread a thick layer of chocolate buttercream over the top of the cake.
  14. Then, you have to put the second cake on top of the first one and frost the top and sides of the cake with the remaining buttercream.
  15. You can decorate the cake with chocolate shavings, chopped nuts, or a sprinkle of cocoa powder and serve.

Here are some variations of the cake you can make by tweaking a few ingredients

In order to add an extra layer of flavor to your cake, you can add a teaspoon of instant coffee powder or a shot of espresso to the batter. If you want to make a mocha cake, you can add 2 tbsp of unsweetened cocoa powder to the batter. To make a layered cake, you can repeat the layers starting with the cake, then the buttercream until you reach the top of the cake.

The addition of coffee to baking provides rich and intense flavors in your dessert, and is also used to enhance the flavor of the chocolate and other ingredients.

You can incorporate dark chocolate in your recipes to enhance the flavor profiles in your sweet dishes. Dark chocolate also is full of antioxidants, providing various health benefits for your heart.

While preparing this dessert, you must ensure that you are melting the chocolate slowly to not burn it. Then, you have to take care to see that the chocolate is tempered for that perfect glossy and smooth finish. Lastly, you can keep the chocolate fresh by storing it in an airtight container.

This moist coffee chocolate cake recipe is a delicious dish that will satisfy all your cravings. The intense coffee flavor, the rich dark chocolate, and the moist cake make this dessert a bonafide crowd-pleaser, no matter the age or demography.
