Another classic dessert is the cupcake, which can also be infused with prosecco. Simply follow the recipe below and you have a hit on your hands.

Ingredients:

For the cupcakes:

  • 150 gm unsalted butter
  • 150 gm caster sugar
  • 150 gm self raising flour
  • 3 medium eggs
  • 2 tsp prosecco flavoring

For the prosecco drizzle:

  • 150 ml prosecco
  • 150 gm caster sugar

For the prosecco buttercream:

  • 200 gm unsalted butter
  • 400 gm icing sugar
  • 5 tbsp prosecco drizzle

For the decoration:

  • Prosecco soaked raspberries
  • Sprinkles
  • Prosecco truffles

Directions:

  • Preheat the oven to 350°F or 177°C.
  • Line a muffin tray with cupcake liners. Set aside.
  • In a bowl, add the butter and sugar and beat with a handheld mixer or a stand mixer with a paddle attachment, until all the sugar has dissolved.
  • Then add the flour, eggs and flavoring and beat more. It should be a light and fluffy mixture.
  • Divide the batter between the cupcake liners, filling them ⅔ fully. Bake for about 20 minutes. The exact time will depend on the machine you're using. You’ll know it's done when a toothpick inserted in the middle comes out clean.
  • While they bake, make the drizzle. In a pan, add the prosecco and sugar on medium heat. Mix until the sugar has fully dissolved. Set aside.
  • Once the cupcakes have baked, remove from the oven and let it cool. Use a toothpick to poke holes in the cupcakes and drizzle the prosecco drizzle into each, layering the entire cupcake. Set aside so the cupcakes can cool.
  • In the meantime, make the decoration. Beat the butter until it's thick and supple. Make sure it's room temperature before you start beating it. If it's straight out of the fridge, let it sit at room temperature first and then use. Then add in the sugar and beat again. Then add the leftover prosecco drizzle and mix it in. Fill this icing into a piping bag with a nozzle at the end. Pipe a design onto your cupcakes. Or use the back of a spoon to roughly place the frosting on the cupcakes. Make sure the cupcakes have cooled completely before adding frosting. If they are still warm, the frosting will melt and drip everywhere.
  • Decorate the cupcakes with sliced fresh fruit or berries, chopped nuts, sprinkles, cookie crumb, or other topping of your choice. You can also add drizzle of chocolate sauce, caramel sauce or a fruit compote. Or you can sprinkle some powdered sugar or cocoa powder on top.
  • Serve cool with a glass of prosecco.
