This Apple Cobbler Cake will make your winter cozier

Ingredients

  • 720 gm tart apples, peeled, seeded, and sliced
  • 100 gm white sugar, plus an additional 100 gm for the batter
  • 1 tsp ground allspice
  • 30 gm butter, softened to room temperature
  • 1 large egg, beaten
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 2 tsp baking soda
  • 125 gm all-purpose flour
  • 120 ml milk
  • Optional glaze
  • 100 gm white sugar
  • 8 gm cornstarch
  • 240 ml boiling water
  • 30 gm butter
  • 1 tsp vanilla extract

Instructions

  • Begin by preheating your oven to 175°C. This step is essential. It ensures that your oven is hot and ready when you’re prepared to bake.
  • In a large mixing bowl, combine the sliced apples with 100 gm of white sugar and the ground allspice. Stir the mixture thoroughly. Make sure all the apple slices are well coated with sugar and spice. Use your spatula for a good mix. This helps infuse the apples with a warm, spicy sweetness. Once coated, pour the apple mixture into a well-greased 9x9-inch baking dish.
  • In a separate bowl, blend the softened butter, beaten egg, and vanilla extract. Stir until the mixture is smooth and creamy. Add the salt and baking soda, mixing well. The salt balances the flavor, and the baking soda gives the cake its characteristic fluffy texture. Spread the apple slices evenly to create a uniform layer.
  • Add the flour gradually (you can sift the flour before you start the process), about 30 gm at a time. Stir thoroughly to prevent lumps and create a smooth batter. Once all the flour is mixed in, add the remaining 100 gm of sugar and combine well. Finally, pour in the milk and stir until the batter is smooth and uniform.
  • Carefully pour this batter over the apples in the baking dish. Use a spatula to spread it evenly-- just make sure all the apples are covered in sugar and spices. Place the dish in the preheated oven and bake at 175°C for approximately 35 minutes or so. Keep an eye on it. The cake is done when a toothpick inserted into the center comes out clean.

Optional Glaze Instructions

  • In a small saucepan over medium heat, combine the 100 gm of white sugar, cornstarch, and the boiling water. Begin whisking as the mixture heats up-- don't be lazy here. The cornstarch will start to thicken the liquid as it comes to a boil. Also, constant whisking is important so the cornstarch does not stick to the bottom of the saucepan.
  • Keep whisking the mixture for about 5 minutes. By this time it should fully thicken. You’ll notice the glaze transform into a glossy, clear consistency.
  • Once the glaze has thickened, remove the saucepan from the heat. Add the butter and vanilla extract, and whisk until the butter has completely melted, giving the glaze a smooth finish.
  • Drizzle this warm glaze over the cake before serving for an extra layer of flavor and shine. This glaze adds an elegant touch and a burst of sweetness that complements the cake perfectly.
