Ingredients:

  • Vegetable oil cooking spray
  • 250 gm all-purpose flour
  • 10 gm baking powder
  • 1 gm salt
  • 170 gm unsalted butter, softened
  • 40 gm unsalted butter, melted
  • 15 gm Cadbury cocoa powder
  • 265 gm granulated sugar
  • 2 large eggs
  • 5 ml pure vanilla extract
  • 120 ml heavy cream or whole milk
  • Confectioners' sugar, for dusting

Method:

  1. Prepare the baking pan and oven: Preheat the oven to 180°C (350°F). Lightly spray an 8-by-4-inch loaf pan with cooking spray, line it with parchment paper, and spray the paper for easy release later.
  2. Combine dry ingredients: In a bowl, whisk together the flour, baking powder, and salt until evenly mixed. Set aside.
  3. Mix the chocolate layer: In a small bowl, whisk the melted butter and cocoa powder until smooth. Ensure no lumps remain. Set this aside for later layering.
  4. Cream butter and sugar: In a food processor or mixing bowl, beat the softened butter with granulated sugar until the mixture is pale, light, and fluffy (about three to four minutes).
  5. Incorporate eggs and flavoring: Add the eggs one at a time, blending well after each addition. Scrape down the sides of the bowl to ensure even mixing. Stir in the vanilla extract until fully combined.
  6. Alternate dry and wet ingredients: Gradually add the dry ingredients to the butter mixture in three parts, alternating with the cream or milk in two parts. Start and end with the dry ingredients, mixing gently after each addition to avoid overworking the batter.
  7. Prepare the chocolate batter: Scoop out 240 ml (about 1 cup) of the plain batter into the cocoa mixture. Mix well to create the chocolate batter.
  8. Layer the batter: Pour half of the plain batter into the prepared loaf pan, smoothing the surface with a spatula. Spread the chocolate batter over the top, then cover it with the remaining plain batter.
  9. Create the marble effect: Use a table knife to swirl through the batter five to seven times, making large loops for a dramatic marbled pattern.
  10. Bake the cake: Bake at 180°C (350°F) for 25 minutes. Reduce the temperature to 160°C (325°F) and continue baking for another 25 minutes. If the top browns too quickly, loosely cover the pan with foil. Bake for an additional 15-20 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
  11. Cool the cake: Allow the cake to cool in the pan for 10 minutes. Then, lift it out using the parchment paper and transfer it to a wire rack to cool completely.
  12. Dust and serve: Sprinkle confectioners' sugar over the cooled cake. Slice and enjoy the perfect harmony of chocolate and vanilla in every bite.
