Peanut butter might often make an appearance with savory or breakfast food items, but when combined with a few other ingredients it truly transforms into something satisfying and delicious. With just a few spoons from a jar of creamy peanut butter, combined with a box of powdered sugar and a spoon, you can stir up fluffy peanut butter fudge in minutes.

There are so many endless options once you unlock the secret of the creamy peanut butter. You can add it to cookies, dip fruit into luscious peanut butter sauces, and even make cups boosted with chocolates. Here are some ideas that will make for a tad savory but sweet desserts:

Peanut Butter Pancakes

Ingredients:

  • 150 gm all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 125 ml milk
  • 1 egg
  • 60 gm peanut butter, melted
  • 60 ml vegetable oil or melted butter

Instructions:

  • In a mixing bowl, whisk together the flour, sugar, baking powder and salt.
  • In a separate bowl, whisk together the milk, egg, melted peanut butter and oil/butter.
  • Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
  • Heat a lightly oiled pan over medium heat. Pour batter into the pan using approximately 1/4 cup batter for each pancake.
  • Cook for 2-3 minutes until bubbles start to form on the surface. Flip and cook for 1-2 minutes more until golden brown.
  • Serve warm with honey, soft butter and fresh fruit.

Peanut Butter Cups

Ingredients:

  • 150 gm smooth peanut butter
  • 100 gm semi-sweet chocolate chips or chocolate baking bar chopped
  • Mini muffin tin

Instructions:

  • Line a mini muffin tin with paper liners. Scoop about 1 tbsp of peanut butter into each liner.
  • Melt the chocolate in a small saucepan over low heat, stirring frequently, until smooth. You can also melt it in the microwave in 30-second intervals, stirring in between.
  • Spoon or pour just enough melted chocolate to cover the peanut butter in each liner.
  • Refrigerate for at least 1 hour, until set.
  • Carefully pop the peanut butter cups out of the tin. Store in an airtight container in the refrigerator for up to 1 week.

Peanut Butter Fudge

Ingredients:

  • 300 gm smooth peanut butter
  • 397 gm sweetened condensed milk
  • 1/2 tsp vanilla extract (optional)

Instructions:

  • Line a baking pan with parchment paper, leaving some overhang on the sides for easy removal later. Set aside.
  • In a medium saucepan, combine the peanut butter and sweetened condensed milk. Heat over medium, stirring constantly, until smooth and melted, about 5-7 minutes.
  • Remove from heat and stir in 1/2 tsp vanilla extract if using.
  • Pour the fudge mixture into the prepared pan. Use a spatula to spread it evenly.
  • Refrigerate for at least 2 hours, until firm.
  • Lift the fudge out of the pan using the parchment paper overhang. Cut it into squares. Store extra in an airtight container for up to 1 week in the refrigerator.

Peanut Butter Energy Bites

Ingredients:

  • 200 gm peanut butter
  • 100 gm rolled oats
  • 50 gm honey or agave nectar
  • 50 gm chocolate chips

Instructions:

  • In a mixing bowl, mix together the 200 gm peanut butter and 100 gm oats until they are combined well.
  • Stir in the 50 gm honey and 50 gm chocolate chips to the mixture.
  • Use your hands and roll the mixture into 1-inch balls and place on a plate.
  • Pop the plate into the refrigerator for at least 30 minutes before serving to firm them up.
  • You can store the leftovers in an airtight container in the refrigerator for up to 1 week. Do the sniff test to check for spoilage.

Peanut Butter Energy Balls

Ingredients:

  • 200 gm peanut butter (chunky)
  • 100 gm powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions:

  • Mix the 200 gm peanut butter and 100 gm powdered sugar together in a mixing bowl until well combined.
  • Stir in the 1/2 teaspoon vanilla extract into the mixture.
  • Use your hands and roll the peanut butter mixture into 1-inch balls and place on a plate, just like the energy balls above.
  • Refrigerate for at least 1 hour before serving so they firm up and are not as sticky to the touch.
  • Optionally, you can also roll the balls in powdered sugar before serving if you want a sweeter coating.
