There aren’t a lot of ingredients in a Banoffee Pie, so it’s important to make sure all the ones you do use are of the highest quality. Opt for ripe, firm bananas, high-quality biscuits for the crust or a well-made pastry crust, and a premium toffee or caramel sauce.  

Master The Textures

The contrast between the soft cream, perfectly ripe bananas and a dense crust is part of the dessert’s magic. For a biscuit crust, crush them finely and mix it with some melted butter for a richer flavor. Whip the cream until soft peaks form, but be cautious not to overbeat, as this can lead to a grainy texture.  And slice the bananas evenly both for visual and flavor consistency.

Recipe For Banoffee Pie

Ingredients:

  • 250g digestive biscuits
  • 100g butter, melted
  • 397g can of condensed milk (for caramel)
  • 2-3 ripe bananas
  • 300ml double cream
  • Cocoa powder or grated chocolate for dusting

Method:

  • Place the digestive biscuits in a sealed plastic bag and crush them using a rolling pin until you get fine crumbs.
  • Mix the biscuit crumbs with melted butter until well combined.
  • Press the biscuit mixture into the base of a 9-inch pie dish to form an even crust.
  • Chill the crust in the refrigerator for about 15-20 minutes. 
  • In a saucepan, melt the butter and add the condensed milk.
  • Stir continuously over low heat until the mixture thickens and turns into a golden caramel. Pour the caramel over the biscuit base and let it cool.
  • Peel and slice the ripe bananas into rounds. Arrange the banana slices over the caramel layer.
  • Spread the whipped cream over the banana layer, covering the entire surface.
  • Chill the Banoffee Pie in the refrigerator for at least 2-3 hours or until set. Before serving, dust the top with cocoa powder or grated chocolate.
