1. Gulab Jamun: The Syrupy King

Gulab Jamun is the undisputed monarch of Indian desserts. These spongy balls are made from khoya (reduced milk solids) and soaked in a fragrant sugar syrup. The best part? They're deceptively simple yet utterly luxurious.

Ingredients:

  • 250 gm Khoya (reduced milk solids)
  • 30 gm Maida (all-purpose flour)
  • A pinch of Baking soda
  • 300 gm Sugar
  • 250 ml Water
  • 5 gm Cardamom powder
  • 15 ml Rose water
  • Ghee (clarified butter) for frying

Procedure:

Mix khoya, flour, baking soda, sugar, water, cardamom powder, and rose water together to make the dough. Male small balls from the dough. Heat up the pan with ghee and let it come to a boil. Once it is hot, add the balls for frying. When it turns golden brown, take them out of the pan. In a separate pan, heat water and add sugar to create syrup. Add some saffron strands to it. Dip the fried balls into the warm syrup and let it soak. Once they cool down, enjoy.

2. Rasgulla: The Soft Cloud of Sweetness

Originating from the sweet streets of Bengal, Rasgulla is a melt-in-the-mouth dessert made from chhena (Indian cottage cheese). These spongy white balls are soaked in a light sugar syrup, making them a perfect balance of sweetness and softness, and are one of the best desserts in India.

Ingredients:

  • 250 gm Chhena
  • 5 gm Semolina
  • 300 gm Sugar
  • 500 ml Water
  • 4 Cardamom pods

Procedure:

Knead the chhena and sugar very well. Then add semolina and cardamom pods to it. The dough should be very soft. Make small balls from the dough. In a pan, add water and sugar to make the syrup. Once the syrup is boiling, add the balls to it. Keep cooking them until the balls soak the syrup and start to get bigger. Turn off the gas and let it come to room temperature.

3. Mysore Pak: The Royal Fudge

Mysore Pak is a traditional South Indian sweet made from ghee, sugar, and gram flour, known for its rich, melt-in-the-mouth texture. Originating from Mysore, this iconic dessert is a perfect blend of sweetness and indulgence, often enjoyed during festivals and celebrations.

Ingredients:

  • 150 gm Besan (chickpea flour)
  • 200 gm Ghee (clarified butter)
  • 300 gm Sugar
  • 100 ml Water

Procedure:

The Mysore Pak Recipe was invented in the royal kitchen of the Mysore Palace, making it a dessert truly fit for kings and queens, or just your royal self. Roast the besan in ghee until it turns golden and aromatic. Boil sugar in water until it reaches one-string consistency and gradually add the roasted besan in it, stirring continuously. Pour in the remaining ghee and keep stirring until the mixture leaves the sides of the pan. Pour the mixture onto a greased plate, spread evenly, and cut into pieces once it cools.

4. Kulfi: The Indian Ice Cream

Kulfi is a popular Indian frozen dessert made from thickened, sweetened milk, often flavored with cardamom, saffron, or pistachios. Creamier and denser than regular ice cream, kulfi is a refreshing treat that's perfect for cooling off in the summer.

Ingredients:

  • 1 lt Full-fat milk
  • 100 gm Sugar
  • 5 gm Cardamom powder
  • A pinch of Saffron
  • 50 gm Chopped nuts (pistachios and almonds)

Procedure:

Boil 1 liter of full-fat milk, stirring frequently, until reduced by half. Add sugar, cardamom powder, and a pinch of saffron. Cook until thickened. Stir in the chopped nuts. Pour the mixture into molds, insert sticks, and freeze for 6-8 hours. Unmold and enjoy.

5. Jalebi: The Spiraled Wonder

Jalebi is a deep-fried, syrup-soaked treat that's crispy on the outside and juicy on the inside. Its bright orange spirals are not just eye-catching but also a carnival of flavors and textures in your mouth.

Ingredients:

  • 200 gm Maida (all-purpose flour)
  • 50 gm Yogurt
  • 300 gm Sugar
  • 200 ml Water
  • A pinch of Saffron
  • Ghee for frying

Procedure:

Mix maida and yogurt to form a smooth batter. Let it ferment for eight hours. Dissolve sugar in water, add a pinch of saffron and simmer until the syrup is sticky. Heat ghee in a pan. Pour the batter into a squeeze bottle or piping bag and the pipe spirals into the hot ghee. Fry until golden. Soak the fried jalebis in warm syrup for a minute. Serve hot.
