Armed with these recipes your home will turn into a paradise of bakery smells that might just bring the curious knocking.
1. Apple Crumble
(Serves 8)
Ingredients:
Crumble Topping
- 120 gm allpurpose flour
- 160 gm brown sugar
- 1 tsp baking powder
- ½ tsp salt
- ½ tsp ground cinnamon
- 115 gm unsalted butter, melted
Filling:
- 1 kg green apples
- 100 gm granulated sugar
- 1 tbsp lemon juice
- 2 tbsp cornstarch
- ½ tsp salt
- 1 tsp ground cinnamon
Instructions:
- Preheat oven to 190°C and lightly grease an 8or 9inch baking dish with butter.
- Peel, core, and cut the apples into quarters to make bitesized pieces.
- Add the apples, sugar, lemon juice, cornstarch, salt, and cinnamon in a large bowl, then toss to coat the apples. Set aside.
- Sift flour, brown sugar, baking powder, salt, and cinnamon, and mix in a bowl. Add the melted butter to the bowl and mix with a fork until you have a crumbly mixture. This is the topping.
- Pour the apple mixture into the prepared dish, spread evenly, and sprinkle the topping over the apples.
- Place in preheated oven and bake for 3545 minutes, until the top is golden brown.
- Remove from oven carefully and let it cool for 15 minutes. Check if the apples are tender.
- Serve the apple crumble, warm with vanilla ice cream.
2. Pear Crumble
(Serves 8)
Ingredients:
For the Pear Filling:
- 600 gm700 gm ripe pears (approx 6 pears)
- 1 tbsp cornstarch
- 1 tbsp lemon juice
For the Crumble Topping:
- 50 gm walnuts
- 150 gm allpurpose flour
- 50 gm rolled oats
- 100 gm brown sugar
- ½ tsp salt
- 125 gm cold unsalted butter, cubed
Instructions:
- Preheat oven to 180°C and generously butter an 8inch baking dish.
- Wash and peel the pears and cut them into quarters, then remove the cores and cut them into 1.5 cm chunks.
- Add the pears to a bowl and sprinkle with lemon juice and cornstarch, tossing to coat.
- Transfer to the buttered baking dish and spread in an even layer.
- Chop walnuts into small pieces and add to a bowl with flour, oats, brown sugar, and salt. Mix to combine.
- Cut the cold butter into small cubes and cut cold butter and add to the flour bowl, mixing with your fingertips until you get a coarse mixture.
- Take handfuls of crumbly mixture and sprinkle over the pears in the baking pan, covering them, with chunks falling off your hands, they don’t need to be fine or evensized.
- Transfer the baking dish to the oven and bake for 4045 minutes. Watch out for the bubbling edges. Once done the top will turn a golden hue with the pears being tender.
- Remove from the oven and cool off for 20 minutes.
- Spoon portions into bowls and serve warm with whipped cream on the side.
3. Plum Crumble Bars
(Serves 8)
Ingredients:
Crumble
- 200 gm allpurpose flour
- 65 gm granulated sugar
- 60 gm unsalted butter, chilled
- 1 egg
- ⅓ tsp baking powder
- Small pinch of salt
Plum Filling:
- 400 gm fresh plums
- 1 tbsp lemon juice
- 40 gm allpurpose flour
- 65 gm granulated sugar
Instructions:
- Preheat the oven to 180°C and line a 13x18inch baking sheet with parchment.
- In a large bowl, whisk flour, sugar, baking powder, and salt until combined.
- Add cold butter cubes to the flour mixture and using a fork cut into the flour and work the mixture until you get coarse but mixed ingredients.
- Whisk the egg in a separate small bowl, then create a well in the center of the flour mixture and pour the egg into it. Using a fork, slowly incorporate the the egg into dry ingredients.
- Once a dough starts to form, use your hands to knead. Don't over knead, stop when just done.
- Refrigerate the crumble, covered with a plastic wrap, while you prep the plums.
- Wash the plums thoroughly, halve them, and remove the seed. Cut them into small cubes and add to a bowl.
- Add lemon juice, flour, and sugar to the plum bowl and toss to coat the plums. Set aside for five minutes to absorb.
- Take half of the chilled crumble and compress it into the prepared pan. Spread the plum mixture, leaving a small border around the edges. Crumble the remaining dough over the plums
- Bake the plum bars for 40 minutes until they turn golden on top and firm.
- Take them out from the oven, and once they cool completely in the pan itself, cut them into squares.
- Clean the knife in between to get cleaner cuts and eat as is or with ice cream.
