For the caramel sauce:
- 124 ml cream
- 2 tsp butter
- A pinch of sea salt
- 2 tsp vanilla extract
For garnish:
- Candied chopped pecans
Method:
- First, you have to preheat your oven to 180°C, grease a springform pan with unsalted butter or cooking spray, and line the bottom with parchment paper.
- In a medium bowl, whisk together flour, granulated sugar, brown sugar, and salt, and add melted butter and chopped pecans while you mix everything well to combine.
- Next, you can spread the pecan mixture over the prepared pan and bake for 10 to 12 minutes or until it is lightly browned.
- Then, you can let it cool to room temperature completely.
- In a large mixing bowl, you have to soften cream cheese with an electric mixer until it is smooth, and then gradually add granulated sugar and mix in until it is well mixed.
- Now, you have to beat in eggs, one at a time, and then stir in vanilla extract as well.
- In a separate bowl, whisk together sour cream and salt with a fork.
- Next, you have to beat the sour cream mixture into the cream cheese mixture until the concoction is a smooth, homogeneous mix.
- Next, you have to pour the cheesecake batter over the cooled pecan crust in the prepared pan, and smooth out the top with a spatula.
- Now, you have to bake it for 55 to 60 minutes. By then, the edges are set and the center is just slightly jiggly.
- Next you have to remove the cheesecake from the oven and let it cool in the pan for 1 hour and use a knife to run it along the edges of the pan to loosen the cheesecake. Then you can let it cool completely on a wire rack.
- In a small saucepan, you have to combine granulated sugar, heavy cream, and unsalted butter, and cook the mixture over medium heat, stirring constantly, until sugar dissolves.
- Now, you have to bring it to a boil, and then decrease the heat to the level of a low to medium intensity, and then let it simmer for 5-7 minutes, or until the caramel sauce has slightly thickened.
- Then, you have to remove the caramel sauce from the heat, and stir in sea salt and vanilla extract and let it cool slightly before using.
- After that, you have to place the cooled cheesecake on a serving plate, and drizzle caramel sauce generously over the top of the cheesecake.
- Next, you have to sprinkle some chopped pecans over the top of the cheesecake, if you want a richer taste.
- Finally, you can serve the cheesecake, and just dig into it!
