Method

Make the Pie Crust:

  • Preheat your oven to 350°F (180°C). In a medium bowl, mix together the chocolate cookie crumbs, melted butter, and granulated sugar until well combined.
  • Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish to form the crust. Bake the crust in the preheated oven for 10 minutes. Allow it to cool completely.

Prepare the Chocolate Filling:

  • In a medium saucepan, whisk together the granulated sugar, cornstarch, and salt. In a separate bowl, whisk the egg yolks, then gradually whisk in the milk until smooth.
  • Gradually whisk the egg mixture into the saucepan with the sugar mixture. Cook the mixture over medium heat, whisking constantly, until it thickens and comes to a boil. Remove the saucepan from heat and stir in the chopped chocolate, butter, and vanilla extract until the chocolate is melted and the filling is smooth.
  • Pour the chocolate filling into the cooled pie crust and smooth the top with a spatula. Place plastic wrap directly on the surface of the filling to prevent skin from forming.
  • Chill the pie in the refrigerator for at least 4 hours or until set.

Make the Whipped Cream Topping:

  • In a chilled bowl, whip the heavy cream until soft peaks form. Add the powdered sugar and vanilla extract and continue to whip until stiff peaks form.
  • Spread or pipe the whipped cream over the chilled chocolate pie. Slice the chocolate cream pie and serve chilled. Garnish with chocolate shavings or grated chocolate.

Tips To Make Perfect Chocolate Cream Pie

  • To make the pie smoother, strain the pudding. It will help you to get rid of the tiny bits of cooked eggs from the filling.
  • Keep a constant eye on the pudding, the filling just takes 10 minutes to cook so even a small mistake can make the egg yolks stick to the bottom.
  • Make sure to store the leftovers in the refrigerator but it can only stay fresh for up to two days.
  • You can ease the process by making the crust ahead of time. The pie crust can be stored in the refrigerator for up to 2 days and can stay in the freezer for up to 3 months.Fresh raspberries for garnish
