How To Bake Coconut Cake

How To Bake Coconut Cake

Ingredients

For the Cake:

  • 240g maida (all-purpose flour)
  • 100g freshly grated coconut
  • 1 cup sugar
  • ½ cup butter (softened)
  • 2 eggs
  • 120ml coconut milk
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • A pinch of salt
  • ½ tsp cardamom powder
  • 1 tsp vanilla essence

For the Glaze (Optional):

  • 1 cup powdered sugar
  • 2 tbsp coconut milk
  • Toasted coconut flakes for garnish

Method

  1. Preheat the oven to 180°C. Grease a round or loaf pan with butter and dust it lightly with flour. Set aside.
  2. In a large bowl, sift together maida, baking powder, baking soda, salt and cardamom powder. Add the freshly grated coconut.
  3. In another bowl, beat the softened butter and sugar until light and fluffy. This helps in creating an airy batter.
  4. Add the eggs one at a time into the butter-sugar mixture, beat well after each addition. Add the vanilla essence and mix.
  5. Add the dry ingredients in batches to the wet mixture, alternating with coconut milk. Start and end with the dry mix. Fold gently until the batter is smooth.
  6. Pour the batter into the prepared pan. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool completely before glazing. For the glaze, whisk together powdered sugar and coconut milk.
  8. Pour over the cooled cake and garnish with toasted coconut flakes. Slice and serve with a hot cup of chai or coffee.
