Delicious Desserts Without Milk: Sweet Treats for a Dairy-Free Delight!

When it comes to desserts, milk often steals the show, lending that rich and creamy texture we all love. But if you're lactose intolerant, vegan, or simply want to skip dairy, fear not—there are delicious alternatives! Desserts without milk can still hit the sweet spot. The trick? Get creative with substitutes like coconut milk, almond milk, or soy milk. These options bring their own unique flavors and textures, turning your desserts into mouth watering treats.

Coconut rice pudding

If you can’t use regular milk, coconut milk is another option. To make a unique rice pudding, use coconut milk. This will add creaminess and richness to the dessert without adding lactose to the dessert. Let’s see how to make a delicious recipe without the use of milk.

Ingredients:

  • 200 gm Arborio rice
  • 400 ml coconut milk
  • 200 ml water
  • 50 gm sugar
  • 5 ml vanilla extract (optional)
  • A pinch of cinnamon for garnish
  • Fresh fruits or toasted nuts (optional toppings)

Procedure:

  1. In a saucepan, add water, coconut milk, and sugar. Let it boil until the sugar dissolves,
  2. Then add the Arborio rice to the milk. Stir it continuously so that it does not burn. You will have to keep stirring until the mixture thickens. This may take up to 30 minutes.
  3. Once the pudding reaches a considerably thick consistency, add the vanilla essence. Then add the pinch of cinnamon powder to add more flavor to the pudding.
  4. Once the pudding is done, serve it warm or at room temperature. Then add some chopped nuts for garnish.

Let’s try this avocado and dark chocolate mousse for a change. Avocado, mixed with dark chocolate, will deliver the creamiest and smooth mousse you’ve ever had!

Ingredients:

  • 2 ripe avocados (around 250 gm of avocado flesh)
  • 100 gm Cadbury Bournville dark chocolate (dairy-free)
  • 10 gm Cadbury cocoa powder
  • 60 ml maple syrup or agave syrup
  • 5 ml vanilla extract
  • A pinch of sea salt

Procedure:

  1. Melt the dark chocolate in a microwave-safe bowl and put it over a pot of boiling water. Keep stirring the chocolate until it is melted completely.
  2. In a food processor, blend the avocado flesh until it becomes smooth.
  3. Once it is done, add the melted chocolate to the mashed avocado. Then add Cadbury cocoa powder, maple syrup, vanilla extract, and a pinch of sea salt.
  4. Now spoon the mixture into fancy bowls or shot glasses to serve. Now refrigerate them for at least two to three hours before serving.
  5. Before serving, sprinkle some cocoa powder. Top them with some chocolate covered strawberries that will not only make it look aesthetic but also taste delicious with every bite.

Vegan lemon olive cake

Just because the cake is vegan, don’t assume it will be dry. The use of olive oil will make the cake as moist as a Cadbury chocolate cake. With the addition of zesty lemon, this lemon cake is the perfect dessert without milk.

Ingredients:

  • 250 gm all-purpose flour
  • 200 gm sugar
  • 10 gm baking soda
  • 2 gm salt
  • 250 ml water
  • 80 ml olive oil
  • 5 gm lemon zest
  • 60 ml fresh lemon juice
  • 5 ml apple cider vinegar
  • 5 ml vanilla extract

Procedure:

  1. After preheating the oven to 180°C, grease the cake pan with some oil and then sprinkle it with some flour. This will not let the cake burn or stick to the cake pan.
  2. In a large bowl, mix flour, sugar, baking soda, and salt. This will be your dry ingredients.
  3. In a separate bowl, whisk olive oil, lemon zest, lemon juice, apple cider vinegar, and vanilla extract.
  4. Now add the flour mixture to the olive oil mixture and mix them well. Gradually add water as required. Make sure that the batter is free of lumps
  5. Now pour the batter into the cake pan and bake it for 30-35 minutes at 180°C. Once it is done, insert a toothpick into the center of the cake. If it comes clean, the cake is ready.
  6. Before serving, cool it down at room temperature.
  7. You can also dust some cocoa powder, matcha powder, or icing sugar on top before serving the cake at high tea.
