Chocolate Chip Cookies
Ingredients:
- 280 gm flour
- 170 gm melted butter
- 100 gm granulated sugar
- 150 gm packed light brown sugar
- 225 gm roughly chopped Cadbury Bournville 50% Dark Chocolate
- 1 tsp baking soda
- 1 ½ tsp cornstarch
- 2 tsp vanilla extract
- 1 egg
- 1 egg yolk
- Pinch of salt
Instructions:
- Combine flour, baking soda, and cornstarch with a pinch of salt in a large bowl.
- Then combine melted butter, both sugars, 1 egg, and the yolk. Mix until there are no remnants of sugar left and your wet ingredients are smooth. Lastly, add the vanilla extract.
- Slowly ladle this into the flour and mix using a spatula. Then add the chocolate chunks. You can also use your hands.
- Refrigerate the cookie dough for half an hour for the butter solids to solidify.
- Then scoop out a tablespoon’s worth of cookie dough and place it on a parchment-lined baking sheet.
- Preheat the oven to 165°C and while it warms up, place the baking tray in the fridge for 15-20 minutes.
- Then pop it in the hot oven for 12 to 15 minutes.
- Transfer onto a wire rack to cool completely.
Sugar Cookies
Ingredients:
- 318 gm flour
- 226 room temperature butter
- 200 gm granulated + 50 gm for rolling
- 2 tsp baking powder
- ¼ tsp salt
- 1 egg
- 1 egg yolk
- 1 tsp vanilla extract
Instructions:
- Preheat the oven to 175°C and prepare your baking tray with baking paper.
- Combine flour; baking powder, and salt first and keep this aside.
- Then cream the butter with 200 grams of granulated sugar.
- Then whisk in the egg, egg yolk, and vanilla extract.
- Add the egg and butter mixture into the flour. Use a spatula to mix thoroughly.
- Place the 59 grams of granulated sugar into a shallow plate.
- Roll out the dough into individual cookies and place them onto the plate with sugar. Press them on the baking tray and refrigerate for 15 to 20 minutes.
- Then bake in the fridge for 10 to 12 minutes until golden.
- Transfer onto a wire rack and let the cookies cool completely. They will become chewy as they cool down.
Oatmeal Raisin Cookies
Ingredients:
- 360 gm rolled oats
- 240 gm flour
- 120 gm room temperature butter
- 150 gm packed brown sugar
- 110 gm raisins
- ½ tsp baking powder
- ½ baking soda
- ½ tsp sea salt
- ½ tsp ground cinnamon
- 2 tsp vanilla extract
- 1 egg
- 1 egg yolk
Instructions:
- Preheat the oven to 175°C and prepare the baking tray.
- Sift the flour, then add baking soda, baking powder, sea salt, and ground cinnamon to this.
- Meanwhile, take the room-temperature butter and beat it with the sugar.
- To this, add the vanilla extract, an egg, and yolk.
- Mix all the ingredients now, and fold in the rolled oats and raisins.
- Let the dough chill in the fridge for 20 minutes before scooping it out onto the baking tray.
- Pop in the fridge for 20 minutes. Then let them cool on a wire rack.
- You can also dip them in melted chocolate if you want.
