Shrikhand
Ingredients:
- 500 gm hung curd (strained yogurt)
- 150 gm powdered sugar
- A pinch of saffron threads
- 2 tbsp warm milk
- 1/2 tsp cardamom powder
- 2 tbsp chopped nuts (almonds, pistachios)
- 1 tbsp rose water (optional)
Method:
- To prepare the saffron milk, first and foremost you need to soak a pinch of saffron in warm milk for about 10 minutes to release its color and flavor.
- After this, take a large bowl and whisk the hung curd in it until it is smooth and creamy. Then, gradually add the powdered sugar and continue whisking until it is fully incorporated.

Ingredients:
- 130 gm rice flour
- 40 gm grated coconut
- 75 gm jaggery, grated
- 1/2 tsp cardamom powder
- A pinch of salt
- Water, as needed
- 8-10 turmeric leaves
- 2 tbsp ghee (for greasing)
Method:
- To prepare your filling, first and foremost take a bowl. Then, mix the grated coconut, grated jaggery, and cardamom powder in it, and then set this aside.
- In another mixing bowl, combine the rice flour with a pinch of salt and water to make a smooth, thick batter.
- It is important to prepare the turmeric leaves in a specific manner. For this, wash and pat dry the leaves and grease them lightly with ghee.
