Ingredients:

  • 251 gm Bournville dark chocolate
  • 122 ml butter
  • 3 eggs
  • 121 ml sugar
  • 62 gm flour
  • A pinch of salt
  • A pinch of Vanilla extract
  • Vanilla ice cream (for garnishing)
  • Whipped cream (for garnishing)

Method:

  1. You first have to preheat the oven to 220°C.
  2. Then, you need to butter six small dessert bowls and dust them with sugar.
  3. Using a double boiler method, you have to now melt the Bournville dark chocolate and unsalted butter.
  4. After this, take a medium bowl, and whisk the sugar and eggs together with a pinch of pure vanilla extract.
  5. After that, you have to pour the sugary mixture into the melted chocolate and whisk until smooth.
  6. Next, you need to whisk in flour and salt, mixing only until they are combined.
  7. Now, you need to pour the batter into the dessert bowls and arrange them on a baking tray, lined with parchment paper.
  8. Ensure that you bake them for around 12 to 15 minutes.
  9. After you remove them from the oven, let them cool for a minute.
  10. Then, you are going to use a knife to run around the edges of the cakes to loosen them from the pan.
  11. Finally, you have to transfer them to the plates and serve warm.

You need to be wary of overmixing the batter. You must let the cakes sit for one to two minutes after they've been removed from the oven to let the steam release, and for them to become firmer and easier to handle. Additionally, you can also serve them with vanilla ice cream or whipped cream. If you like, you may sprinkle them with a pinch of sea salt or powdered sugar. You can easily couple this dish with a hot cup of espresso or a nice French roast. Even vanilla or coffee ice cream goes pretty well with the chocolate flavor.

If the lava cakes turn out undercooked, you will find them soggy in the center. All you have to do is prop them into the oven and bake them again for about five more minutes.

Ingredients:

  • 371 gm pie dough
  • 122 gm sugar
  • 63 gm light corn syrup
  • 3 eggs
  • 251 gm Bournville dark chocolate
  • 122 gm chopped pecans
  • 3 tsp vanilla extract

Method:

    1. First you have to heat the oven to 180°C.
    2. Next, you have to roll out the pie dough to a thickness of three mm.
    3. Now, you can press the dough into a tart pan.
    4. Then you have to whisk together sugar, corn syrup, and eggs in a bowl until well blended.
    5. After that, you can melt Bournville dark chocolate using a double boiler method.
    6. Next, you can mix in melted chocolate with the sugar mixture until well combined.
    7. After that, you can add chopped pecans to it.
    8. Then, you have to pour the filling into the prepared tart crust.
    9. Now, you can bake the tart for 40 to 45 minutes.
    10. Finally, you have to take it out of the oven and let it cool.
    11. Before serving, you can sprinkle some powdered sugar on top.

It is suggested that you pre-toast the pecans before chopping them in order to derive more flavor from them. You can also use several types of nuts or walnuts and hazelnuts for an interesting mix of flavors.
