After a wholesome Christmas brunch, what can be better than completing the meal with a delicious and satiating festive dessert that captures the spirit of the season? Cupcake Wreath

This picture-perfect dessert is a masterpiece for Christmas feast. Prepared with cupcakes and an eye-catching decoration, it is extremely tempting. You can get creative with the decorations and use vibrant shades for your cupcake wreath.

Ingredients

For red velvet cupcakes

  • 1/4 cup vegetable oil
  • 1/4 cup melted butter
  • 1 egg
  • 1/2 cup buttermilk, room temperature
  • 1 1/2 tsp white vinegar
  • 1 tsp vanilla extract
  • 1 cup granulated sugar
  • 1 tsp. unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 1/4 cups all-purpose flour
  • 1 squirt of red gel food coloring

For green cream cheese buttercream frosting

  • 3/4 cup unsalted butter, room temperature
  • 1/4 cup full-fat cream cheese, room temperature
  • 3 cups powdered sugar
  • 1/2 tsp salt
  • 1 Tbsp heavy cream
  • 1 tsp vanilla extract
  • green gel food coloring

Method

Red Velvet Cake

  • Preheat oven to 350 degrees F. Line a muffin tin with 12 cupcake liners. In a bowl, combine butter and vegetable oil. Then mix in the egg, buttermilk, white vinegar and vanilla extract.
  • Add granulated sugar and whisk for half a minute. Mix in the cocoa powder, salt and baking soda, and whisk again. Mix the flour into the batter.
  • Then add food coloring and mix until the batter is evenly colored a deep shade of red. Divide the batter equally between the cupcake tins and bake for about 15 to 20 minutes. Remove from the oven and allow them to cool for 10 minutes. Later place the cupcakes on a wire rack to finish cooling.

Cream Cheese Buttercream Frosting

  • Beat the butter and cream cheese for 30 seconds until smooth. Add vanilla extract, salt and beat again until the ingredients are combined well. Slowly add powdered sugar on a very low speed.
  • Use green food coloring for ½ cup of frosting; a light green shade, 1/2 cup a medium green, and color the remaining frosting with deep green.

Baked Applesauce Donuts

Made with the flavor of cinnamon, applesauce and vanilla extract, this is another yummy dessert for Christmas brunch. Prepared from scratch, these baked delights are moist and fluffy. For toppings, you can also use maple extract, caramel sauce or any of your favorite ingredients.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for dusting)

Method:

  • Preheat your oven to 350°F (175°C). Grease a donut pan with cooking spray or a light coating of oil.
  • In a bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt. In a separate bowl, mix together the applesauce, oil, egg, and vanilla extract until well combined.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  • Spoon or pipe the batter into the prepared donut pan, filling each mold about 2/3 full and bake for 12-15 minutes. Allow the donuts to cool in the pan for a few minutes then transfer them to a wire rack to cool completely. Once done, dust them with powdered sugar and enjoy.

Banana Pudding

This is a simple yet delicious dessert that is perfect for your last-minute preparations. Layered with vanilla wafers and banana slices, this pudding will be loved by everyone. You can also store the leftovers in the refrigerator for up to three days.

Ingredients

  • 2 cups cold milk
  • 5 ounce instant vanilla pudding mix
  • 14 ounce sweetened condensed milk
  • 1 tablespoon vanilla extract
  • 12 ounce frozen whipped topping, thawed
  • 16 ounce package vanilla wafers
  • 14 small bananas, sliced

Method

  • Add milk and pudding mix in a bowl, beat for 2 minutes and blend in condensed milk until smooth.
  • Stir in vanilla extract, then fold in whipped topping. Layer wafers, banana slices, and pudding mixture in a glass bowl. Chill in the refrigerator and serve with extra crushed wafers.

Peanut Butter Chocolate Bites

Ingredients:

  • 1 cup old-fashioned oats
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup cocoa powder
  • 1/4 cup chocolate chips
  • 1 teaspoon vanilla extract
  • A pinch of salt

Method

  • In a bowl, mix together the oats, cocoa powder, chocolate chips and salt. In another bowl, add the peanut butter, honey, and vanilla extract.
  • Stir ingredients of both bowls together until well combined. Take small portions of the mixture and roll them into bite-sized balls using your hands.
  • Place the dessert bites on a plate or tray and refrigerate for at least 15-20 minutes to firm up. Serve and enjoy.

Black Forest Cookies

We have all enjoyed black forest cakes for birthdays and other celebrations. But have you ever tried black forest cookies? Combined with the flavors of chocolate and cherry, these soft and chewy cookies are a must in this holiday season.

Ingredients

  • ½ stick unsalted butter
  • ¾ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ⅓ cups all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup drained & finely chopped maraschino cherries plus for garnish
  • ¾ cup semi-sweet chocolate chips plus for garnish

Method

  • Preheat the oven to 350º F. In a large bowl beat the butter and sugar for 1 minute. Add in the egg, vanilla and beat again.
  • In a separate small bowl, whisk together the flour, cocoa, baking soda, and salt. Gradually add the dry ingredients to wet ingredients, mixing continuously.
  • Add in the chopped cherries and chocolate chips, mix until combined. Using a cookie scoop, drop dough balls onto a silicone lined baking sheet. Press extra cherry pieces and chocolate chips outside of the dough balls.
  • Bake for 13-15 minutes. Allow the cookies to cool on the baking sheet for about 15 minutes and then move them to a cooling rack.
