  • 2 tbsp gelatin (optional for setting, 20 grams)

Method

  1. Dissolve the gelatin in 3 tablespoons of cold water and let it bloom for 5 minutes. Heat it gently until dissolved, do not boil.
  2. Break the chocolate into pieces in a heatproof bowl. Place the bowl over a double boiler or microwave in short bursts, stirring between each, until melted.
  3. In a separate bowl whip the heavy cream with sugar until soft peaks form. Don’t overwhip or the cream will turn into butter.
  4. In a small saucepan, heat the milk until warm. Add the melted chocolate to the milk, stirring until combined. Add the vanilla extract.
  5. If using gelatin, add the dissolved gelatin to the warm chocolate-milk mixture and mix well.
  6. Fold the whipped cream into the chocolate mixture in small amounts. Use a spatula to combine until smooth and fluffy, don’t deflate the cream.
  7. Spoon or pipe the mousse into serving cups or glasses, fill halfway or to the top depending on your preference.
  8. Refrigerate for 2-3 hours (or overnight) to set.
  9. Top with fresh berries, whipped cream, mint leaves or edible gold flakes.
