If that’s not the case and you can’t recall the last time you spoke to your friend, we highly recommend you try these homemade chocolate cake recipes, which range from 1 kg sponge cake recipe to half the amount. In case you are looking for an elaborate version, try this delicious chocolate truffle cake recipe, your BFF or BFFs will surely appreciate it because effort never goes to waste, especially when time is scarce and distances longer. And if you are short on time, try this eggless chocolate truffle cake recipe step-by-step for a breezy and quick cake. 

Ingredients:

  • 500 gm eggless chocolate sponge cake

Chocolate Truffle Icing:

  • 350 gm Cadbury Bournville Dark Chocolate (chopped)
  • 250 ml fresh cream
  • Soaking Syrup: 4 tbsp sugar+120 ml water

Instructions:

Chocolate Truffle Cake
  1. Take a non-stick saucepan and heat the fresh cream on medium flame, just until it starts to bubble. This should take 1 minute, make sure to stir continuously. 
  2. Remove from heat and then add the dark chocolate, mixing until the chocolate is completely melted. Set aside to cool, your chocolate icing is ready. 
  3. Now, take that store-bought chocolate sponge cake and slice it horizontally to have two layers. Use a sharp knife otherwise, you'll have a mess on your hands.
  4. Take half of the soaking syrup and pour it niftily on the bottom loaf.
  5. Pour half of the chocolate icing over this loaf.
  6. Place the other loaf on top of this one, then repeat with the other sponge cake half and use up the syrup and chocolate icing. Cover the sides of the cake with the icing.
  7. This step is optional. You can garnish the cake with fresh swirls of whipped cream and chocolate shaving or just a glace cherry on top. 
  8. Refrigerate for an hour or two for the icing to set and then cut and serve. 

2. Simple Dark Choco Cake

Here’s another recipe, with some more ingredients in case you don’t want to remix and decorate a store-bought cake. And of course, this is just in case you have enough time on your hands. Do try this homemade chocolate cake recipe and surprise your friends on this friendship day and catch up on lost time.  

Ingredients:

  • 150 gm Cadbury Bournville dark chocolate
  • 30 gm Cadbury cocoa powder
  • 150 gm all-purpose flour 
  • 150 gm granulated sugar
  • 4 eggs, at room temperature
  • 200 gm butter, room temperature
  • 1 ½ tsp baking powder
  • A pinch of salt

Instructions:

  1. First, chop up the dark chocolate and over low heat or bain-marie, melt it, stirring frequently. Set aside to cool down
  2. Cut down the butter into small cubes adding it to a bowl with the sugar. Use an electric whisk, stand, or handheld to mix, at medium speed to cream the two ingredients. 
  3. Crack the eggs into the mixing bowl, one at a time, mixing at each turn.
  4. Keep beating the mixture until you have a smooth, but thick creme. 
  5. Next, add the almost cooled liquid chocolate into the bowl and give it a quick mix to incorporate.
  6. Let this stand, and remove the electrical equipment, while you prep the dry ingredients. Mix the flour, salt, cocoa powder, baking powder and sift. Once that is done, add it to the wet mixture mixing with a spatula as you add it in batches. 
  7. Preheat the oven to 180°C.
  8. Take a 9-inch cake pan, line it with baking paper, then pour the batter into it and smoothen the surface.
  9. Bake the cake for 40-45 minutes and test with a toothpick inserted into the center. No crumbs equals that the cake is done. If there are wet crumbs, bake for 5 more minutes. 
  10. Take out the cake and let it cool for a bit, and then remove it from the pan to cool on a rack completely.
  11. This cake can also be made for the base of the truffle cake above.
