  • 125 gm all-purpose flour
  • 30 gm cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 150 gm granulated sugar
  • 115 gm unsalted butter, softened
  • 50 gm brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • Sanding sugar (for rolling)
  • 2 sliced almonds (for eyes)
  • 2 green Cadbury Gems (for decoration)
  • 2 brown Cadbury Gems (for decoration)
  • Chocolate (for piping; use as needed)

Method:

  1. Whisk together flour, cocoa powder, baking soda, and salt in a medium bowl.
  2. In a large bowl, beat granulated sugar, butter, and brown sugar until creamy.
  3. Add the egg and vanilla extract to the mixture and beat well.
  4. Gradually mix in the dry ingredients until just combined.
  5. Cover and refrigerate the dough for at least 30 minutes.
  6. Preheat the oven to 175°C. Line two baking sheets with parchment paper.
  7. Scoop 24 portions of dough and reserve the rest. Roll portions into one-inch balls and coat in sanding sugar.
  8. Flatten each ball into a two-inch circle on the baking sheets.
  9. Roll reserved dough into 1/2-inch balls and place two on each circle for ears.
  10. Pinch the tops of the small balls to form triangles.
  11. Place sliced almonds on each circle for eyes.
  12. Bake at 175°C for 8 to 10 minutes until edges are set.
  13. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  14. Melt chocolate in a small bowl in the microwave.
  15. Pipe chocolate on each almond and place a green Cadbury Gem on top.
  16. Add a dot for the nose using a brown Cadbury Gems and pipe two whiskers.
  17. Let chocolate set before serving.

  • 50 gm rolled oats
  • 50 gm pretzels (chopped)

Method:

  1. Preheat the oven to 175°C.
  2. Arrange oven racks in the upper and lower thirds.
  3. Line two baking sheets with parchment paper.
  4. In a bowl, mix flour, baking soda, cinnamon, and salt.
  5. In another bowl, beat butter, granulated sugar, and brown sugar until fluffy.
  6. Add eggs and vanilla; mix well.
  7. Slowly add dry ingredients; mix until combined.
  8. Fold in Cadbury Gems, peanuts, oats, and pretzels.
  9. Scoop 16 portions of dough (about 65 gm each) onto baking sheets, spaced 3 inches apart.
  10. Flatten each ball slightly with your hand.
  11. Bake at 175°C for 16-18 minutes until golden brown.
  12. Let cookies cool completely on sheets. Enjoy!
