Inculcating in your children the importance of caring for the planet is absolutely necessary. There’s no better way to do this by sharing an activity together, like creating these kid-friendly desserts. Here are some delish dessert recipes that you can turn to if you want to make learning about being kind to the planet and doing your bit more interesting and interactive:
Earth Day Pudding
Ingredients:
- 150 g raw cashews, soaked for an hour
- 240 ml non dairy milk
- 240 g cooked sweet potatoes
- 60 ml maple syrup
- 18 g Cadbury Cocoa Powder
- 45 g grated Cadbury Bournville 70% Dark Chocolate
- 2 tbsp white chocolate chips
- Sprig of mint
- Pinch of salt
Instructions:
- Rinse the cashews first and then soak them in water for about an hour. Once that’s done, drain the water, give them another rinse.
- To cook the sweet potatoes, either bake them with the skin on in the oven or pressure cook until soft.
- Then blend the cashews, non dairy milk of your choice, peeled and cooked sweet potatoes, maple syrup, and Cadbury Cocoa Powder.
- Transfer the chocolate pudding into individual cups, garnish with some white chocolate chips and grated chocolate.
- Then plant mint sprigs onto every pot. Refrigerate and consume chilled.
Nature-Inspired Sugar Cookies
Ingredients:
- For the cookies: 280 g flour
- 170 g butter
- 150 g granulated sugar
- 2 tbsp milk
- 1 tbsp cornstarch
- 1 tsp vanilla extract
- ½ tsp baking powder
- ½ tsp salt
Icing:
- 180 g powdered sugar
- ½ tsp vanilla extract
- 1-2 tbsp milk
- Blue and green food colouring
Instructions:
- Beat the butter until smooth and creamy, then add granulated sugar.
- Then add vanilla extract, milk, and cornstarch. Beat the butter again until everything is mixed.
- Add the flour, baking powder, and salt to this and knead into a firm dough.
- Flatten and wrap in parchment paper, and refrigerate for about 30 minutes.
- Take out the chilled cookie dough from the fridge, then roll it out. Use nature themed cookie cutters of your choice, and cut out as many cookies as you can.
- Preheat the oven at 180 C and once warm, arrange the cookies on a baking tray, and bake for 10 minutes.
- Cool on a wire rack and prepare the sugar cookie glaze.
- Whisk powdered sugar, vanilla extract, and a tablespoon of milk until smooth and glossy. Divide into. Decorate the cookies with the icing.
Muddy Energy Balls
Ingredients:
- 135 g rolled oats
- 240 g peanut butter
- 3 tbsp maple syrup
- 2 tbsp chocolate chips
- 2 tbsp Cadbury Cocoa Powder
Instructions:
- Mix all of the ingredients into a large bowl until well-combined.
- Grease your palms with some coconut oil and roll out the energy balls, placing them on a plate or a silicon mat.
- Refrigerate before biting into them.
Vegan Chocolate Bark
Ingredients:
- 500 g chopped vegan chocolate
- 150 g raisins
- 150 g mixed nuts
Instructions:
- Melt the chopped vegan chocolate in the microwave or using the double boiler method where you place a heatproof bowl over a pan of simmering water.
- Once the chocolate chunks are melted, give them a good swirl, take them off the heat and add the raisins and mixed nuts.
- You can also roughly chop the raisins and mixed nuts if you want.
- Then pour this mixture onto a parchment lined baking sheet and spread it out using a spatula.
- Pop the sheet into the fridge for about 30 minutes to an hour. You can also quicken the process by placing it in the freezer.
- Once the chocolate has resolidified, break it into big pieces so it resembles a tree’s bark, and enjoy.
