Ingredients:
- 3 large eggs, separated
- 240 ml milk
- 2 teaspoons lemon zest, from 2 lemons
- 90 ml fresh lemon juice, from 2 lemons
- 2 tablespoons unsalted butter, melted
- ¼ teaspoon salt
- 45 g all-purpose flour
- 200 gm sugar
Directions:
- Preheat the oven to 350°F or 177°C.
- Prep ramekins by greasing them with butter. Set aside.
- In a bowl, add the egg yolks, milk, lemon zest, lemon juice, butter and salt. Then add the flour and the sugar and whisk until it's a smooth mixture. Set aside.
- Beat the egg whites in a bowl with a handheld mixer or a stand mixer fitter with a paddle attachment. Keep beating till soft peaks form. Pour ¼ of the mixture into the lemon mixture and whisk it until smooth. Then add the remaining egg whites mixture and gently fold it in using a spatula. Be gentle as you fold it. The batter should be light, foamy and slightly liquidy.
- Spoon the batter into the ramekins. Tap them so that the batter evens out.
- Fill a pan with water and place the ramekins in the pan. Place the pan in the oven and bake for about 48 minutes. The exact time will depend on the machine you have. You’ll know they are done when the cakes are puffy and lightly golden on top.
- Once baked, remove the ramekins from the water using tongs. Let them cool for about half an hour. They will sink slightly as they cool, this is normal.
- Dust with confectioners’ sugar, cocoa powder, cinnamon powder or any other topping of your choice. Also add some berries on top, either sliced or whole. You can add one or two berries per ramekin, or cover the entire top with berries.
Notes, tips and tricks:
- It's best to use full-fat, whole milk. However, if you prefer, you can also use low-fat, skim, or 2% milk. And if you really need to, even nondairy alternatives will work, like almond milk, oats milk, soy milk or any other milk of your choice.
- If you don't have unsalted butter, you can use salted butter too, but then skip the pinch of salt. However, it's better to use unsalted butter and add a pinch of salt, since the salt brings out the other flavors and makes them more intense and dynamic.
- Use icing sugar or confectioners’ sugar. If you don't have this, beat normal sugar in a blender until fine and powdery. Then use it as normal.
- You can also prepare the batter ahead of time so it requires less work during the day of the event or of serving. Remove the batter and let it sit at room temperature before baking. Or, prepare the cakes ahead of time. Cover them with plastic wrap and store them at room temperature. Then, before you serve, preheat the oven, remove the plastic wrap, and heat the cakes for about 10 minutes. Serve warm.
- Instead of individual ramekins, you can also bake the batter as one large cake. If this is the case, you can top the cake with anything that you desire. This is your place to be as creative as you like. One option is a sprinkling of icing sugar or cocoa powder and cinnamon powder. You can add berries like blueberries or strawberry slices, or fresh fruit like apple or banana slices. For liquids, there are options like chocolate or caramel sauce, a jam or fruit compote or even almond or peanut butter spread out on top. You can sprinkle chopped nuts on top like almonds, cashews, and other nuts. You can also use more fancy toppings like cookie crumbs, brownie bits, marshmallows, or any other topping you prefer. Or you can use decorative elements like edible glitter, stars or other colorful shapes, or chocolate or rainbow sprinkles. Or you can use any combination of these toppings!
