Here’s how to celebrate anniversary at home with scrumptious and easy desserts

Is your marriage anniversary or your spouse’s birthday on a weekday and you’re too busy or occupied to do something elaborate? Then try one or some of these desserts from a no bake chocolate mousse cake recipe, an Oreo cookie fudge recipe, to an Oreo fudge brownies recipe all of which are no-bake desserts and need just a little effort to make.

1. Chocolate Mousse Cake(Serves 12)

Ingredients

  • 20 Oreo cookies
  • 60 gm butter
  • 200 gm Cadbury Dairy Milk chocolate, chopped
  • 200 gm Cadbury Bournville 70 % Dark Chocolate, chopped
  • 600 ml heavy cream

For decorating

  • Whipped cream, fresh raspberries

Instructions

  1. Grease a 9-inch springform baking cake pan with a little butter. Set aside.
  2. Add all the Oreo cookies to a blender and grind until they are reduced to fine crumbs.
  3. Put butter in a microwave-safe bowl, and melt it, then pour it over the Oreos in the blender and grind again to have a wet and coarse mass.
  4. Pour the Oreo mixture into the cake pan and press down to form the base crust. Refrigerate for 30 minutes to set.
  5. In a microwave-safe bowl, add chocolate and melt for 1-2 minutes, pausing to stir in between. Once smooth and creamy take out and set aside to cool slightly.
  6. Take heavy cream in a mixing bowl and use an electric mixer to beat, until stiff peaks form. Fold this beaten cream into the chocolate bowl, until combined. Pour over cookie crust.
  7. Refrigerate until set for 4-6 hours or overnight. Before serving, decorate with whipped cream and fresh raspberries and slice.

2. Oreo Fudge Bar(Makes 32 squares)

Ingredients

  • 500 gm white chocolate chips
  • 400 gm sweetened condensed milk
  • 300 gm Oreos, coarse crumbs

Instructions

  1. Line a standard square brownie pan, 8 inches, with parchment paper. Set aside.
  2. Pulverize the Oreo cookies into coarse chunks, transfer them to a bowl, and set aside.
  3. Put the white chocolate chips and in a microwave-safe bowl, set the timer for 2 minutes, pausing to stir in between as the chocolate melts. When the chocolate has almost melted, add the condensed milk, and stir until you have a smooth concoction.
  4. Remove from the microwave, add the crushed Oreos, and stir to mix.
  5. Transfer the fudge into the prepared pan and use a spatula to spread evenly. Tap the pan carefully, to release any air bubbles.
  6. Let the fudge cool down, then refrigerate for 1 hour. Your Oreo cookies and cream fudge will be ready by then. Cut into squares and eat.

3. Panna Cotta(Serves 4)

Ingredients

  • 60 ml milk, chilled
  • 1 ¼ tsp unflavored powdered gelatin
  • 480 ml heavy cream
  • 50 gm granulated sugar
  • 1 tsp vanilla extract

Instructions

  1. Put the milk in a small bowl, and sprinkle gelatin over it. Let it stand for 15 minutes for the gelatin to bloom. If you plonked the whole powder in one spot, stir to distribute the gelatin.
  2. Take a saucepan, add cream, sugar, and vanilla extract, and bring just to a boil on medium flame. Once the sugar dissolves, turn down the heat to low, and add the bloomed gelatin to it. Whisk well to get a smooth but thick liquid.
  3. Remove from heat, and distribute the liquid between 4 ramekins. Let it cool outside a little, then refrigerate for 3-4 hours for them to set.
  4. After all of them are set, serve in ramekins, topped with fresh fruit, coulis, or lemon curd.

If you like, top with fresh fruit, berries, berry sauce, or lemon curd.

4. Oreo Brownies(Makes 6 servings)

Ingredients

  • 1 box brownie mix
  • Eggs and oil (as written on the brownie pack)
  • 1/4 Cup hot fudge topping (chilled or room temp)
  • 16 Oreos, crushed

Instructions

  1. Preheat the oven according to the pack instructions on the box. Grease an 8×8-inch baking tray generously with butter and set aside.
  2. Read the instructions on the pack and prepare the brownie batter, as per the steps given. Prepare or use store-bought hot fudge, add to the brownie batter, and mix to combine.
  3. Pour half of the batter into the prepared tray, add the crushed Oreos, then pour the remaining batter over the Oreo layer.
  4. Bake for 40-50 minutes or as the pack says. Your brownies will be moist and fudgy not dry as a cake. Cut into squares and serve.

5. Strawberry Trifle(Serves 4)

Ingredients

  • 225 gm vanilla sponge cake, diced
  • 450 gm heavy whipping cream
  • 340 gm fresh strawberries, diced
  • 300 gm strawberry Jam

Instructions

  1. Take a big bowl, and use a whisk to whip the heavy cream until soft peaks form.
  2. Place the 2 tablespoons of the diced strawberries and 1 tablespoon of the strawberry jam at the bottom of a trifle glass, big enough for four servings.
  3. Scoop up the cake pieces, then layer over the strawberries, followed by the same amount of freshly whipped cream.
  4. Repeat the layers until all of it has been used up, ending with the whipped cream on top.

5. Decorate with fresh strawberries once done, and refrigerate for 30 minutes before serving.
