This gives the dish a very homey and rustic look. Cobblers are quite popular during the summer season because there are so many fruits like berries and stone fruits available during the warmer months. Cobblers are usually served warm, so one can enjoy the sauciness of the fruity filling along with the sponginess of the biscuits. It's also enjoyed with some cream or some ice cream. Like self saucing puddings, cobblers are also really easy to make and forgiving. This is a simple and convenient dish that can be made by cooks of all skill levels. Peach Cobbler
Ingredients:
- 1.6-1.8 kg fresh peaches, chopped
- 50 g packed light or dark brown sugar
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- ⅛ tsp ground nutmeg
- ⅛ tsp ground ginger
- Pinch of salt
- 250 g flour
- 100 g granulated sugar
- ¼ tsp baking soda
- ½ tsp salt
- 113 g cold and cubed butter
- 120 ml buttermilk
For the egg wash:
1 egg beaten with 1 tbsp buttermilk
Instructions:
- Preheat the oven to 177 C and lightly grease a baking dish with some room temperature butter or oil.
- Mix the chopped peaches with the brown sugar, salt, and other spices in a large bowl. Add this into the baking dish, and bake for about 10 minutes.
- After 10 minutes have passed, take it out of the oven and let it sit. Don’t shut the oven off.
- Prepare the biscuit topping by mixing cold butter with the flour, sugar, baking soda, and salt. You can use a fork to mash the butter into the flour until you get pea-sized crumbs.
- Incorporate the buttermilk slowly until you get a sticky dough.
- Else, add all of the ingredients in a food processor and give them a good blitz.
- Scoop the sticky dough over the partially cooked fruit filling, covering all exposed bits.
- Brush with the egg and buttermilk egg wash, then bake in the preheated oven for 40 to 45 minutes or until golden brown.
- Remove and let it cool for 5 to 10 minutes, then serve with some cream or ice cream.
Berry Cornmeal Cobbler
Ingredients:
- 907 gm fresh blueberries
- 120 gm light or dark brown sugar
- 3 tbsp cornstarch
- ¼ tsp ground cinnamon
- 180 gm yellow cornmeal
- 120 gm flour
- 60 gm granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 6 tbsp softened butter
- 60 ml buttermilk
Instructions:
- Preheat the oven to 200 C and grease a baking dish with some softened butter or oil.
- Then toss the berries in cornstarch, brown sugar, and cinnamon. Arrange them in the baking dish.
- In a large mixing bowl, combine yellow cornmeal along with flour, granulated sugar, baking powder, salt, butter, and buttermilk. This should be a wet and sticky dough.
- Drop generous spoonfuls of the yellow batter over the spiced blueberries.
- Bake in the oven for about 30 minutes. You will notice that the top is going to turn golden brown. You can also brush it with egg wash, and give it 5 more minutes in the oven for a glossy look.
- Once done, let it cool outside the oven for 5 to 10 minutes, and serve. You can also serve it at room temperature.
Pineapple and Mango Cobbler
Ingredients:
- 600 gm cubed mangoes
- 300 gm crushed canned pineapple (unsweetened)
- 240 gm vanilla cake mix
- 1 tbsp cornstarch
- 1 tsp lemon juice
- 4 tbsp sugar (omit if using sweetened pineapple)
- 5 tbsp cold, unsalted butter
- Water
Instructions:
- Preheat the oven to 176 C, and grease a cake tin with butter or oil. Set aside.
- Toss the cubed mangoes and canned pineapple with some cornstarch and lemon juice, then layer it at the bottom of the cake tin.
- Mix the vanilla cake mix with the cold, unsalted butter to get a crumbly texture. Then slowly add water so you get a wet mix.
- Add dollops of the cake mix over the fruit, then sprinkle with granulated sugar. Omit the sugar if you’re using sweetened pineapple.
- Bake in the oven for 35 minutes, then let it cool slightly before serving it with some ice cream.
