Chocolate Drizzle for Bundt Cake

The drizzle in particular is an important component of the cake, since the sweetness balances out the tang of the cake. It also gives the cake a sophisticated look which will impress whoever you serve it. The chocolate drizzle needs to be silky and smooth, gently flowing down the sides of the cake in ribbons. As it cools, it should harden enough that it holds the shape of the cake but soft enough that it melts on the tongue. It only requires a few ingredients and takes just a few minutes to prepare. And of course, it’s highly customizable, meaning that the thickness, sweetness and intensity of the chocolate can be altered to suit your preferences. And this guide is going to teach you everything you need to know to make the perfect drizzle.

Ingredients

  • ½ cup (100g) dark chocolate or semi-sweet chocolate (chopped or chips)
  • ¼ cup (60ml) heavy cream (for creaminess)
  • 1 tbsp butter (for extra shine)
  • 1 tsp vanilla extract (for depth of flavor)
  • 1 tbsp honey or corn syrup (for glossiness)

Optional flavor enhancements:

  • ½ tsp lemon zest – To echo the citrus flavor of the cake
  • Pinch of sea salt – To enhance the richness of chocolate
  • 1 tbsp brewed coffee – To deepen the chocolate flavor

Method:

  • The most important thing for a smooth, lump free chocolate drizzle is ensuring that you melt it gently. There are two ways of melting chocolate.
    • One, using a double boiler. For this, the first thing you need to do is fill a small pan with water and place it on medium heat till it comes to a simmer. Then place a heatproof bowl on top, making sure the base doesn’t touch the water. Add the chocolate and butter to the bowl and stir gently till it melts. This will ensure even and consistent melting.
    • The other thing you can do is melt the chocolate in the microwave. Add the chopped chocolate and butter to a microwave safe bowl and heat for 15 seconds. Then stop, stir it well, and then pop it in for another 15 seconds. Continue in this way till all the chocolate is in and evenly melted.
  • In another pan, add the heavy cream and heat until just steaming.
  • Now slowly pour the warm cream into the melted chocolate, stirring continuously as you do.
  • Next, add in the honey or corn syrup and vanilla extract to make the drizzle shinier and more flavorful.
  • Whisk until the mixture is glossy. It should be smooth, thick and shiny.
  • If the drizzle is too thick, 1 or 2 tsp of warm milk or cream to thin it out. If it's too thin, add some more chopped chocolate and whisk until the chocolate has melted. You’ll know it's reached the desired consistency when the chocolate flows off the back of a spoon with ease but isn’t runny.
  • Now it’s time to drizzle the mixture on your cake. There are a number of drizzling techniques you can try out.
    • One option is creating the classic drip effect. Simply pour the chocolate over the cake with a spoon and allow it to slide down the sides of the cake naturally.
    • Another option is transferring the chocolate to a small piping bag or a zip lock bag with a corner slightly snipped. Pipe the drizzle in delicate zigzags or whatever shape you want across the cake.
    • You can also pour the chocolate over the entire cake and spread it gently using an offset spatula. This will create an indulgent look with a smooth finish.

Tip: Let the drizzle set for about 15 minutes before you slice the cake. This will lead to a clean presentation.

Notes:

  • You can then go in with toppings like almonds, or even pistachios for a nutty crunch. Lemon zest or candied lemon slices will highlight the cake’s citrus notes. Or add some sea salt to balance out the sweetness of the chocolate. You can also add edible gold dust. Really, you’re only limited by your imagination. So get creative.

And the cake is ready to slice and serve.
