How to Make a Triple-Layer Chocolate Cheesecake Recipe

Ingredients:
For the base:
- 250g digestive biscuits (or any favorite cookies)
- 100g melted butter
- For the first layer (chocolate base layer):
- 200g dark chocolate (70% cocoa)
- 200g cream cheese, softened
- 200ml heavy cream
- 100g sugar
- 2 large eggs
- 1 tsp vanilla extract
- For the second layer (chocolate cheesecake layer)
- 200g milk chocolate
- 200g cream cheese, softened
- 100ml heavy cream
- 50g sugar
- 1 tsp vanilla extract
For the third layer (white chocolate layer)
- 200g white chocolate
- 200g cream cheese, softened
- 100ml heavy cream
- 50g sugar
Method:
Begin by preparing the crust. Crush digestive biscuits into fine crumbs, either by using a food processor or placing them in a ziplock bag and crushing them with a rolling pin. Then mix the crumbs with melted butter until they're evenly coated. Press this mixture into the bottom of a springform pan so that it's packed tightly and evenly. Then chill this crust in the fridge while you make the cheesecake layers.
For the first chocolate layer, melt the dark chocolate by using a double boiler or microwave it in short batches and stir between each interval. Let it set aside. Now, in another mixing bowl, beat the cream cheese and sugar until smooth and fluffy. Then, add eggs beating well, followed by stirring in the vanilla extract. Fold in the heavy cream and then melted dark chocolate. Pour this over the chilled biscuit base and spread it out as evenly as possible. Bake at 160°C for about 25-30 minutes until it is set on the outside and still slightly wobbly in the middle. Leave it to cool completely before transferring it to the fridge to chill for a few hours or preferably overnight.
For the second layer, melt the milk chocolate in the same way you did for the first layer. Once melted, set aside to cool slightly. In another mixing bowl, beat the cream cheese and sugar together until smooth. Add the melted milk chocolate and heavy cream, stirring well to combine. Gently spread this mixture over the cooled dark chocolate layer. Place it back in the fridge to set for at least 2 hours.
For the final layer, melt the white chocolate by using the same procedure. After it melts, cool it and mix it with cream cheese, sugar, and heavy cream. Beat the mixture until smooth and then spread it over the milk chocolate layer. Let the cheesecake be refrigerated for at least 4 hours so that the layers will be well set and combined.
