Salted caramel is such an amazing way to enjoy any dessert. It's rich, indulgent, and buttery, but also slightly salty thanks to the sprinkling of salt, preferably sea salt flakes. Here are the five most delicious dessert recipes that use salted caramel that you definitely need to try:

Salted Caramel Ice Cream

Ingredients:

  • 650 ml heavy cream
  • 300 g sugar
  • 120ml water
  • 30 g unsalted butter
  • 1 tsp sea salt flakes
  • 360 ml whole milk
  • ½ tsp pure vanilla extract

Instructions:

  1. Heat about 325 ml of heavy cream in a saucepan until it comes to a gentle simmer. Do not boil. Remove from heat.
  2. In another saucepan, bring the water and sugar to a boil and keep cooking until the mixture turns amber and you get a caramel sauce.
  3. Remove from heat and immediately add about ⅓ of the still warm cream into this. Add the unsalted butter and mix until you get a thick sauce. Finally, add the salt.
  4. Transfer the caramel sauce into a container and let it come to room temperature.
  5. Whisk all of the heavy cream, milk and ½ of the salted caramel in an ice cream maker.
  6. Once the ice cream is done and the rest of the salted caramel and disperse it roughly throughout.
  7. Freeze for a bit before enjoying it.

Homemade Salted Caramel Toffee

Ingredients:

  • 200 gm granulated sugar
  • 60 ml light corn syrup
  • 100 gm unsalted butter
  • 120 ml heavy cream
  • 1 tsp sea salt flakes and a sprinkle for garnish

Instructions:

  1. In a heavy bottomed saucepan, caramelise the sugar and corn syrup until it reaches an amber colour. Do not stir because the sugar will seize.
  2. Once the caramel is done, take it off heat, add the unsalted butter and let it swirl and melt. At this point you can mix to create an emulsion.
  3. Slowly stir in the heavy cream and let it simmer on low heat for a bit. It will thicken slightly and you will get a soft caramel.
  4. Take it off heat once again and add the salt.
  5. Pour this mixture into silicone moulds, garnish with sea salt, and let it sit in the fridge overnight.
  6. Unmould the next day and enjoy these tiny treats.

Salted Caramel Brownies

Ingredients:

For the brownies:

  • 200 gm unsalted butter
  • 200 gm Cadbury Bournville Rich Cocoa 70% Dark Chocolate
  • 200 gm caster sugar
  • 4 eggs
  • 130 gm flour
  • 50 gm Cadbury Cocoa Powder

For the salted caramel:

  • 150 gm granulated sugar
  • 75 gm unsalted butter, cut into small pieces
  • 125 ml double cream
  • ½ tsp sea salt flakes

Instructions:

  1. Heat the oven to 180°C and grease a baking tin with some unsalted butter.
  2. Melt 200 g of unsalted butter in a pan, then break the Cadbury Bournvilla Rich Cocoa Chocolate bar in pieces and let the pieces melt into the butter. Do this off heat.
  3. Create the caramel by melting the sugar until it’s amber, take it off the heat and add the butter, followed by the cream. Let it simmer on low heat on the stove until it thickens. Once that’s done, season with sea salt.
  4. Divide the caramel into two halves. Put one half of the caramel in a large bowl, followed by 200 g of caster sugar, 4 eggs, and whisk. Then add the melted butter and chocolate mixture to this.
  5. Sift the flour and Cadbury Cocoa Powder over the egg, caramel, and chocolate mix. Mix until smooth.
  6. Pour half of this batter into the prepared baking tin. Then spoon some of the leftover caramel on top.
  7. Cover this up with the rest of the brownie batter, then pour more caramel over this. Drag a skewer or toothpick over it to create a pattern.
  8. Sprinkle some more sea salt before baking the brownies in the oven for 25 to 30 minutes.
