Ingredients
- 200g digestive biscuits
- 3 tbsp butter
- 500g cream cheese
- 1 cup fresh cream
- ½ cup sugar
- 2 eggs
- ¼ cup fresh lemon juice
- Zest of 1 lemon
- 1 tsp vanilla extract
- 1 tbsp cornstarch
- ½ cup water
Instructions
- In a bowl, combine the crushed digestive biscuits and melted butter.
- Press the mixture into the base of a springform pan to form an even layer. Chill in the fridge.
- Beat the softened cream cheese until smooth.
- Add fresh cream, sugar, eggs, lemon juice, lemon zest, and vanilla extract. Beat until combined. Add cornstarch and mix again.
- Pour the cheesecake batter into the prepared crust in the springform pan. Smooth the top with a spatula.
- Add 1/2 cup water to the Instant Pot. Place the cheesecake pan on a trivet and put in the Instant Pot.
- Close the lid and set Pressure Cook on high for 35 minutes.
