  • 2 large eggs

  • A pinch of salt
  • 200 gm mixed berries, preferably strawberries, blueberries and raspberries
  • 30 gm honey or maple syrup
  • Whipped cream for serving,

Instructions:

  1. In a mixing bowl, combine the flour, sugar, and salt.
  2. In another bowl, whisk the eggs and add the milk and melted butter.
  3. Gradually pour this mixture into the flour. Don’t stop whisking until it is smooth and lump free. Allow the batter to rest for 30 minutes.
  4. Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour a ladleful of batter into the pan, swirling to coat the surface evenly.
  5. Cook for a couple of minutes until the edges begin to lift, then flip and cook for another couple of minutes on the other side.
  6. In a small bowl, combine the mixed berries with honey or maple syrup, adjusting the sweetness to your liking.
