Chocolate truffles are another special dessert that is simple to prepare but can become a crowd pleaser. This sweet treat is traditionally made with a smooth chocolate ganache centre and is coated in cocoa powder. Made with very few ingredients, this homemade dessert can also be coated with your favorite toppings like sprinkles, crushed nuts or melted chocolate. Here is a delicious recipe to make dark chocolate rose truffles for your next dinner party. This creamy and rich dessert combines dark chocolate with floral rose petals and is rolled in cocoa powder. This impressive delight can also become a last-minute treat, if you are running out of time. The creamy and complex flavor of rose dark chocolate truffles can make anyone think that it’s the work of a pro chef.

Ingredients
- 8 ounces dark chocolate
- 4 ounces heavy whipping cream
- 1-ounce unsalted butter
- 2 tbsp edible dry rose petals
- 2 tsp rose extract
- ¼ cup cocoa powder
Method
- Microwave the cream in a heat-safe bowl in 20-second sessions until steaming. Give it a stir between sessions so that it heats evenly. Then add the dried petals and let them steep for 5 to 10 minutes.
- Reheat the cream for another 10 seconds in the microwave. Pour the hot cream over the bowl of chocolate with a strainer. Make sure that the chocolate is evenly distributed below the cream. Remove the strained rose petals.
- Allow the mixture to sit for 5 minutes, this will let the chocolate melt. Combine the chocolate and cream together by whisking until it begins to emulsify and smooth out. If you see some chocolate chunks in it, microwave the mixture, stirring constantly until smooth.
- Add butter to it and continue to stir until fully incorporated. Then add rose extract, 1 teaspoon at a time. Be careful with the quantity.
- Cover the ganache with plastic wrap and let it sit until it has cooled completely and become firm. This step can take 1-2 hours. You can also chill it in the refrigerator, but this method will make it more difficult to scoop.
- Then using a cookie scoop, measure the ganache and make balls out of it. Place them onto a baking sheet lined with parchment paper. Allow them to sit for 10 minutes in the fridge to set up.
- Meanwhile, set up the bowl of cocoa powder to coat the truffles. Roll it again into a smooth round ball. Then coat it in cocoa powder and discard the extra by shaking off. Place the truffle back on the sheet pan and let it sit for another 10 minutes.
- Garnish with the dried rose petals and now your rose chocolate truffles are ready to enjoy.
- These truffles can be stored in an airtight container and then refrigerated for up to 4 days.
Tips To Make Rose Chocolate Truffles
- Always use a high-quality dark chocolate that is 64% or more for the best results. Semi sweet or bittersweet chocolate has the most cocoa solids and cocoa butter which gives the firmest truffle with ab intense flavor.
- Go for heavy whipping cream as it has the highest percentage of fat. This emulsifies well with the chocolate creating a rich and smooth truffle. Besides rose you can also use other edible flowers like lavender, jasmine, viola and hibiscus.
