How many times have you rummaged through your fridge or shelves looking for a quick sweet fix only to find nothing nearly as appetizing? In such desperate moments, the thought of whipping up a sweet treat from scratch might see like a daunting task. This doesn’t have to be the case though. What if we told you that you only need 15 minutes (or even less) to create a delicious sweet treat for yourself? Sounds unbelievable, right? Here are five recipes for quick desserts that will have you reaching out for them all the time.

Dates Barfi

This rich and healthy dates barfi makes for a great snack, especially during the winter.

Ingredients

  • 400 gm dates (deseeded)
  • 20 gm poppy seeds
  • 50 gm almonds (chopped)
  • 50 gm cashew nutes (chopped)
  • 50 gm raisins
  • 25 gm grated coconut
  • ½ tsp cardamom powder
  • 75 gm ghee

Instructions

  • Roast poppy seeds over low heat.
  • Grind dates till they turn coarse and pastey.
  • Mix dry fruits and nuts in ghee and fry over low heat. As soon as it starts browning, add grated coconut and cardamom powder; mix well. Add dates. Mix and cook for about 2-3 minutes.
  • Transfer the mixture to a plate and spread it evenly.
  • Set aside to cool before cutting it up into squares.

Banana and Chocolate Spread Sandwich

A recipe inspired by Elvis Presley’s famous peanut butter and banana sandwich.

Ingredients

  • 2 slices of bread
  • 2 tbsp Chocolate spread
  • 1 banana (peeled, sliced)
  • 2 tbsp butter

Instructions

  • Spread 1 tbsp chocolate spread to each slice of bread. Arrange slices of banana on one slice of bread. Place the other slice on top of it.
  • Add 1 tbsp butter to a frying pan, place the sandwich in it and fry until golden.
  • Add the rest of the butter, flip the sandwich to the other side and fry until golden.
  • Allow the sandwich to sit for a few minutes before serving.

Choco Chip Cookies

Hit by a sudden craving for chocolate chip cookies but you don’t want to make an entire batch of it? This quick dessert recipe is the one for you!

Ingredients

  • 40 gm plain flour
  • 1 tbsp caster sugar
  • 1 tbsp brown sugar
  • A pinch of salt
  • 1 tbsp butter
  • 1 egg yolk
  • ¼ tsp vanilla essence
  • 2 tbsp mini chocolate chips

Instructions

  • In a bowl, add flour, both the sugars, salt, butter, egg yolk and vanilla essence. Combine well.
  • Fold the chocolate chips into the cookie mix.
  • Grease two ramekins with butter. Divide your cookie mixture into two balls and press each one at the base of the ramekins.
  • Microwave for 60 seconds on high. You can also microwave for an additional 30 seconds depending on how crunchy you like your cookies.

Cinnamon Roll in a Mug

This dessert recipe is perfect for the fall. If you’re not a fan of cinnamon, you can experiment with marmalade or jam too.

Ingredients

  • 90 gm plain flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 5 tbsp water
  • ¾ tsp ground cinnamon
  • 1½ tbsp caster sugar
  • 1 tsp coconut oil
  • 3 tbsp icing sugar
  • ¾ tsp water

Instructions

  • Grease your mug with coconut oil.
  • In a bowl, mix flour, baking powder and salt. Add 5 tbsp water and mix until it forms a dough. Knead the dough for a few minutes.
  • Place the dough on a floured surface and roll it into a long strip — 8-10 cm in length.
  • Sprinkle cinnamon and caster sugar over the strip and fold the edges inwards. Roll the strip into a coil, large enough to fit your mug. Place the coiled dough into the mug.
  • Microwave for 80 seconds on high.
  • To make the glaze, mix icing sugar and ¾ tsp water.
  • Remove the cinnamon roll from the mug and place it on a plate. Spread the glaze over it and serve.

Passionfruit Mug Cake

Bored of the conventional chocolate mug cake? Try this summery, tropical passionfruit version.

Ingredients

  • 2 tbsp unsalted butter
  • 1 tsp vegetable oil
  • 1 passionfruit (plus extra to serve)
  • ½ tsp vanilla extract
  • 1 egg yolk
  • 2 tbsp sugar
  • 2 tbsp plain flour
  • ½ tsp baking powder
  • 2 tbsp white chocolate chips

Instructions

  • In a mug, melt butter in a microwave for 15-20 seconds. To this, add oil, passionfruit pulp, vanilla extract and egg yolk; mix well.
  • Then add sugar, flour and baking powder until well combined. Stir in the chocolate chips.
  • Microwave the mixture for 1.5 minutes.
  • Serve with a scoop of ice cream and more passionfruit.
