Ingredients

  • 1 ½ cups- all-purpose flour
  • 200 g- sugar
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • Salt a pinch
  • 120 g unsalted butter
  • 2 eggs
  • 1 tsp- vanilla extract
  • ¾ cup- milk

For the Topping & Filling:

  • Mixed berries
  • 250 ml- whipping cream
  • 2 tbsp- icing sugar
  • 1 tsp- lemon zest

Method

  1. Preheat your oven to 180°C (350°F), and grease, line a 9-inch round cake tin with parchment paper.
  2. In a large bowl sift together the flour, baking powder, baking soda and salt. Set aside.
  3. In another bowl beat the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time then the vanilla extract and mix well.
  5. Add the dry ingredients to the butter mixture in 3 parts, alternating with the milk.
  6. Start and end with the dry ingredients. Mix until just combined.
  7. Pour the batter into the prepared cake tin. Tap gently to remove air bubbles.
  8. Bake for 25-30 minutes or until a toothpick comes out clean. Let it cool completely.
  9. In a chilled bowl whip the cream with icing sugar and lemon zest until soft peaks form. Refrigerate until ready to use.
  10. Once the cake is cool, slice it in half. Spread a generous amount of whipped cream on the bottom layer, add a layer of mixed berries and top with the second layer.
  11. Top with more whipped cream and arrange the remaining berries. Refrigerate for 1 hour. Slice and serve cold. Yum!
