If you’re planning a birthday party for your kid, then having an adequate variety of snacks and desserts is essential. No Bake Cheesecake Bites

Ingredients:

  • 180 ml whipping cream
  • 226 g room temperature cream cheese
  • 100 g sugar
  • 1 ½ tbsp vanilla extract
  • 30 mini tart shells
  • Berries or fresh fruit for garnish

Instructions:

  • Take 180 ml of cream and whip until you get stiff peaks.
  • Fold in the room temperature cream cheese, sugar, and vanilla extract into the stiff whipping cream.
  • Fill the tart shells to the brim with the cream cheese and whipping cream.
  • You can use whole berries or chopped fruit to garnish the tarts.
  • Refrigerate the tarts and serve them chilled.

Ingredients:

  • 397 g condensed milk
  • 1-2 tbsp unsalted butter
  • 4 tbsp cocoa powder (you can also use 100 g white chocolate)
  • 20 chocolate liners

Topping options: confectioners’ sugar, cocoa, chocolate sprinkles, colorful sprinkles

Instructions:

  • Add the condensed milk, cocoa powder, and unsalted butter in a saucepan. Put the heat on medium heat and mix to incorporate everything.
  • Lower the heat and let the mixture thicken for about 5-10 minutes.
  • Then set it aside to cool and become solid.
  • Grease your palms with some butter or oil, and then take out about a generous tablespoon’s worth of the mixture.
  • Roll it into an even ball, and place it in the truffle liner.
  • Add the toppings of your choice on a plate, and roll each truffle in them.
  • Place all the prepared truffles on a baking tray and let them cool down in the fridge for about an hour.
  • If you’re using white chocolate instead of cocoa powder, chop the chocolate into fine shards, then add it to the saucepan with condensed milk and butter. Keep mixing on medium heat until the chocolate melts evenly. Follow the rest of the above mentioned steps.

No Bake Strawberry Cheesecake

Ingredients:

  • 2 tbsp water
  • 2 ½ tsp gelatin powder
  • 225 g digestive biscuits
  • 170 g melted butter
  • 426 g fresh strawberries
  • 71 g granulated sugar
  • 360 ml heavy whipping cream
  • 685 g cream cheese

Instructions:

  • Add water in a small bowl and then dissolve the gelatin in it. Leave this to rest for 10 minutes.
  • Break the biscuits in a ziploc bag until you have a fine crumb or do this step in a food processor.
  • Take the biscuit crumbs out in a large bowl, and add the melted butter. Mix well so you get a wet sand-like consistency.
  • Microwave the gelatin mixture for 20-30 seconds, then leave it to rest for 5 minutes.
  • Purée the strawberries with sugar in a food processor.
  • Then add the cream cheese, make sure it’s room temperature, in the food processor as well and blend again.
  • Slowly pour the whipping cream into this and blend in batches.
  • Press the crumbed biscuits in the bottom and sides of a 9-inch springform pan, then set in the fridge for 30 minutes.
  • Once you’ve made the cheesecake filling, pour it evenly into the biscuit base.
  • Cover the cheesecake with cling film and let it refrigerate for about 6 hours.
  • When you’re ready to serve, you can decorate the cheesecake with whole strawberries or pipe some whipped cream over it.
