1. Simple Flourless Milk Powder Cake Recipe
Ingredients:
- 4 eggs, lightly whisked
- 115 gm milk powder
- 3 tsp baking powder
- 1/2 orange, zested
- A pinch of salt
Optional:
- ½ tsp vanilla extract
- 45 gm chocolate chips, melted
Instructions:
- Preheat the oven to 180°C, then line a 6inch cake pan or baking pan with parchment paper or grease it. You can also do both, first grease, then stick the parchment paper on it.
- Take a bowl, crack the eggs into it, and beat them to mix up the egg whites and yolks.
- Sift the milk powder and baking powder and mix them in a small bowl. Add it to the eggs, and whisk well until you have a lumpfree batter. This takes 12 minutes depending on your wrist motions.
- Add the orange zest, vanilla essence (if using), and salt, into the bowl and whisk until combined well.
- Pour your batter into the prepared cake pan and bake for 2530 minutes. Test with a toothpick inserted into the cake’s center to check if it comes out clean. If it has wet crumbs clinging to it, bake for a couple more minutes.
- Remove from the oven and let it cool in the pan for 10 minutes. Then invert it into a cooling rack until completely cool.
- If you are using melted chocolate chips, add a little butter to it, mix to combine and pour over the stillhot cake, in the pan, preferably.
2. Roasted Milk Powder Bundt Cake Recipe
Ingredients:
- 115 gm milk powder
- 2 eggs
- 1 tsp vanilla extract
- 240 ml vegetable oil
- 120 ml water
- 115 gm caster sugar
- 120 gm allpurpose flour
- 1 tbsp baking powder
For decorating: Sweetened condensed milk or simple syrup, and fresh fruits
Instructions:
- Preheat the oven to 180°C and butter a standard bundt cake pan, flour it to set the grease and shake out the excess flour.
- Take a skillet, and heat it on medium flame, and once it starts to warm up, add the milk powder, and dry roast until all of it is toasted nicely and a light brown color.
- Take a bowl, whisk eggs with the vanilla extract, then pour the oil and mix. Add water and sugar next and mix again. Use an electric mixer for best results.
- Take another bowl, sift flour and baking powder and combine.
- Add the flour to the egg bowl, beating or whisking to mix. Make sure no dry streaks are visible. Take care not to overmix. Add the toasted milk into it next, and mix well.
- Pour the batter into a prepared bundt cake.
- Bake the cake for 2530 minutes, until a toothpick inserted into it comes out sans wet crumbs.
- Remove from the oven and let it cool in the pan for twothree minutes until you can touch the pan.
- Flip the cake on a serving plate and immediately drizzle with condensed milk or syrup.
- Garnish with powdered sugar and serve with fresh fruits.
3. Eggless Vanilla Milk Powder Cake Recipe
Ingredients:
- 150 gm allpurpose flour
- 100 gm butter
- 100 gm milk powder
- 150 gm powder sugar
- 200 ml milk
- ½ tsp vanilla essence
- 1 tsp baking powder
- ½ tsp baking soda
Instructions:
- Grease a 6inch cake tin, either round or square with butter. Then flour the butter surface and shake out the excess.
- Take a bowl, and add the flour, milk powder, baking powder, and soda. Mix well and sieve to get rid of solid bits and set aside. Divide into three parts.
- Preheat the oven to 180°C while you prep the batter.
- Take a bowl, add the butter, sugar, and vanilla essence, and beat, using an electric mixer, to get a pale, smooth and creamy concoction.
- To the butter bowl, add 1 part of the flour mixture, while beating on low speed, alternate with the milk, and add the flour last and mix.
- After all ingredients are added, beat for an additional 2 minutes. Pour the batter into the baking tin, and tap against a counter to remove bubbles.
- Bake for 2025 minutes, until a skewer inserted in the center, comes out clean.
- Remove from the oven and keep the cake tin on a wire rack. Let it cool down then unmold the cake and put it on the wire rack to cool completely. Serve as is or with a glaze.
