Ingredients:

- 2 tablespoons icing sugar

Method:
- Preheat your oven to 150°C and line a baking sheet with parchment paper. Draw a circle of about 20 cm on the paper as a guide.
- Whisk egg whites until soft peaks are formed in a clean, dry bowl. Gradually add granulated sugar, whisking continuously one tablespoon at a time until stiff peaks form, and the mixture is glossy.
- Gently fold in cornflour, vinegar, and vanilla extract.
- Spoon the meringue onto the parchment paper and spread it within the drawn circle into a nest-like shape with slightly raised edges.
- Bake for 60-70 minutes and then turn off the oven and let the meringue cool completely inside.
- Now whip the heavy cream with the icing sugar till soft peaks form. Spread the whipped cream on the cooled meringue base.
- Add a tropical twist of sliced mango, kiwi, pineapple chunks, and passionfruit pulp.
