This classic dessert can be made surprisingly quickly - in just under 30 minutes to be precise. Just throw together the ingredients and bake for 10-12 minutes. Just make sure you have all the ingredients beforehand.

Ingredients:

  • 227 gm salted butter softened
  • 232 gm granulated sugar
  • 213 gm light brown sugar packed
  • 2 tsp pure vanilla extract
  • 2 large eggs
  • 410 gm all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp sea salt
  • 396 gm chocolate chips

Directions:

  • Preheat the oven to 375°F. Line three baking sheets with parchment paper and set aside.
  • In a medium bowl, mix flour, baking soda, baking powder, and salt. Set aside.
  • Cream together butter and sugar until combined. Beat in eggs and vanilla until light (about 1 minute).
  • Mix in the dry ingredients until combined.
  • Add chocolate chips and mix well.
  • Roll 2-3 Tablespoons of dough at a time into balls and place them evenly spaced on your prepared cookie sheets.
  • Bake in preheated oven for approximately 8-10 minutes. Take them out when they are just barely starting to turn brown.
  • Let them sit on the baking pan for 2 minutes before moving to the cooling rack.

This elegant dessert can be made in just under 30 minutes. You’ll need a pre-made tart shell for this one. And you can have fun decorating the tart with fresh fruits in a spiral pattern or some other decoration.

Ingredients:

  • 488 gm whole milk
  • 200 gm granulated sugar
  • 6 egg yolks
  • 32 gm cornstarch
  • 25 teaspoon Salt
  • 1 teaspoon vanilla extract
  • 1 premade tart
  • 18 ml Fresh cut fruit:
    • Strawberries
    • Blueberries
    • Blackberries
    • Raspberries
    • Peaches
    • Mango
    • Kiwi

Directions:

  • In a medium saucepan over medium heat, heat milk until tiny bubbles appear on the surface, about 6 to 8 minutes (180°C). Stir to prevent scalding.
  • In a large bowl, whisk together egg yolks and sugar. Whisk in cornstarch and salt. While whisking constantly, pour in half of the hot milk. Whisk in remaining hot milk and return to saucepan.
  • Cook over medium heat, whisking constantly, until the mixture thickens to a firm consistency, about 5 to 8 minutes. Whisk in vanilla and pour in to a bowl.
  • Cover with plastic wrap, pressing it directly on to the surface of the pastry cream. Refrigerate until chilled, about 2 to 3 hours.
  • Fill cooled tart crust with chilled pastry cream. Arrange fruit in a decorative pattern.

Notes:

  • It’s important to let the pastry cream chill completely before you add it into the tart. Spoon it in and then level with the back of a spoon.
  • The fruits can be sliced thinly and placed in a spiral patter. Or cut into small cubes and place them all across the top of the tart.

Cheesecake parfait

This no-bake dessert is easy to make and is light and refreshing on the palette.

Ingredients:

  • 2 packages cream cheese, at room temp
  • 3 Tablespoons heavy cream
  • 5 Tablespoons sugar
  • 1 Tablespoon fresh lemon juice
  • 2 teaspoons lemon zest
  • 1 Tablespoon vanilla extract
  • 1 1/2 cups crushed graham crackers
  • 1 1/2 cups fresh fruit, such as strawberries, blueberries or raspberries
  • 1 cup store-bought or homemade whipped cream

Directions:

  • In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese, heavy cream and sugar until smooth.
  • Add the lemon juice, lemon zest and vanilla extract and beat until light and creamy, about 3 minutes.
  • Add a layer of graham crackers to the bottom of each parfait glass.
  • Top the graham crackers with a layer of the cheesecake then a layer of fruit.
  • Top each parfait with a dollop of whipped cream and serve.

Notes:

  • If you want to place the cheesecake mixture in a neat and beautiful way, consider putting it in a sealable plastic bag or in a piping bag, and then pipe it into the glasses in a spiral pattern.
  • You can also use fruits other than the ones mentioned here, like mangoes, peaches or other berries.
