Flatten each one gently with the back of a spoon. Bake for 10-12 minutes, or until the cookies are firm to the touch. Let them cool on the tray for about five minutes before transferring them to a wire rack to cool completely.
Variation is the spice of life! Add a twist to these peanut butter cookies, and surprise your guests and kids as you delight them with your creativity. For a tropical flavor, mix in 30 gm of shredded coconut into the dough. If you prefer a bit of warmth, add 1/2 tsp of cinnamon and a pinch of nutmeg for spiced peanut butter cookies. For extra softness and a natural sweetness, mash half a ripe banana and blend it into the wet ingredients. If you're craving a salty-sweet combo, crush 50 gm of salted pretzels and fold them into the dough. For an indulgent treat, swap the dark chocolate chips with white chocolate chunks. If you’re a fan of coffee, add 1 tsp of instant coffee granules to the wet ingredients for a peanut butter mocha flavor. You can also experiment with dried berries, like cranberries or raisins, for a chewy burst of flavor. The possibilities are endless!
Tips and tricks:
- Use bananas, the ripe ones. And you could reduce the amount of sugar in your recipe.
- Or use a drop or two of vanilla extract for a deeper profile of flavors.
- You could notch up your cookies by adding flaky sea salt. Adding this is totally optional, but the flaky salt adds a contrast to the sweetened cookies.
To keep these peanut butter cookies fresh and delicious, store them in an airtight container at room temperature for up to four days. If you live in a warmer climate or prefer a longer shelf life, refrigerating them is a great option; they’ll stay fresh for up to a week. For extended storage, freeze the cookies in a freezer-safe container or bag, separating layers with parchment paper to prevent sticking. Adding a small amount of sugar in the storage container is a clever trick—it absorbs excess moisture, helping to maintain the cookies’ perfect texture and preventing them from becoming soggy over time. When ready to enjoy, simply let the cookies come to room temperature or warm them slightly for that fresh-out-of-the-oven feel!
