Ingredients:

For the loaf:

  • 3 ripe bananas
  • 156 gm flour
  • 114 gm melted butter
  • 150 gm granulated sugar
  • 120 gm tahini
  • 50 gm brown sugar
  • 2 eggs
  • ¾ tsp baking soda

 For the glaze:

  • 120 gm powdered sugar
  • 2 tbsp tahini
  • 1 tbsp milk
  • Pinch of salt

Instructions:

  • Sift the flour and baking soda together then set aside.
  • Preheat the oven to 175°C, then grease a loaf pan lightly with some room-temperature butter. The layer has to be thin so that the outside of your loaf isn’t greasy.
  • Add the ripe bananas, melted butter, sugar, tahini, brown sugar, and eggs in a food processor. Blend well.
  • Pour into a large mixing bowl. Make sure to scrape the sides of the blender to get as much of this mixture into the bowl.
  • Use a spatula to gently fold the flour and baking soda into the wet ingredients. Don’t dump all the flour in one go, do it in multiple batches.
  • Once mixed, pour into the loaf pan and bake for 30 to 45 minutes. Insert a toothpick into the loaf tin around the 30-minute mark, and if it comes out clean, it’s cooked through.
  • Take it out of the oven to cool and prepare the glaze.
  • For this, mix all of the ingredients listed above to achieve a glossy, not runny, glaze. Once the cake is cool, pour the glaze over it. You can garnish with some toasted sesame seeds if you want.
