Creating delicious desserts shouldn’t have to be a test of your cooking skills. If you’re not very adept at using your oven or cooking over the stovetop, don’t worry — you can still whip up desserts that will satisfy your sweet cravings as long as you have a functioning freezer/refrigerator. Ever heard of “cooking without fire desserts”? Here are four mouth-watering dessert recipes you can create without any use of heat.    

Lime Cheesecake

These sweet, tangy coconut lime cheesecakes are vegan-friendly and gluten-free, and take only 15 minutes to put together.

Ingredients

For the base:

  • 80 gm rolled oats
  • 35 gm raw almonds
  • 2 tbsp coconut sugar
  • 2 tbsp shredded coconut (unsweetened)
  • 2 tbsp coconut oil (melted)

For the cheesecake:

  • 143 gm blanched almonds (soaked)
  • 177 ml coconut milk
  • 59 ml lime juice
  • 60 ml + 3 tbsp pure maple syrup
  • 59 ml coconut oil
  • 1½ tsp vanilla extract
  • 1 tbsp lime zest (for garnish)
  • 1 tbsp unsweetened shredded coconut (for garnish)

Instructions

To make the base:

  • In a food processor, add rolled oats, almonds and coconut sugar and blend until all the ingredients have broken down.
  • Add shredded coconut and coconut oil and pulse until well combined.
  • Divide the mixture into your muffin cups and press to create a firm base.
  • Chill the muffin cups for at least 15 minutes in the freezer.

To make the cheesecake:

  • In a blender, blend almonds, coconut milk, lime juice, maple syrup, coconut oil and vanilla extract on high speed. You should end up with a smooth and creamy mixture.
  • Pour the cheesecake mixture into the muffin cups. Top with lime zest and shredded coconut. 
  • Place the muffin cups in the freezer for at least an hour.
  • Allow the muffins to thaw for 30 minutes before serving.
  • Your cheesecake muffins are ready to be devoured. 

Chocolate spread Truffles

This fudgy chocolate dessert takes only 15 minutes to prepare. Although this recipe includes cornflakes, you can replace it with muesli too for added crunch.

Ingredients

  • 4 tbsp Chocolate spread
  • 6 milk biscuits
  • 7 gm cornflakes
  • 1 tsp butter
  • Cadbury Cocoa powder (for rolling)

Instructions

  • In a bowl, add Chocolate spread and butter and microwave for 1-2 minutes.
  • Add crushed biscuits and cornflakes and mix well.
  • Let the mixture cool before rolling them into balls.
  • Then, roll the balls into cocoa powder.
  • Refrigerate for 3-4 hours before serving.

Kiwi Banana Museli Parfait

This delicious dessert using yogurt is not only great after a meal but makes for a great breakfast dessert too.

Ingredients

  • 1 kiwi
  • 1 banana (ripe but firm)
  • 64 gm Greek yogurt (chilled)
  • 1 tbsp honey
  • 3-4 tbsp muesli (you can use granola too)
  • 1 tbsp chia seeds
  • ½ tsp vanilla extract
  • 1 tbsp nuts (for topping)

Instructions

  • Soak chia seeds in lukewarm water until they are fully bloated.
  • Mix yogurt, honey and vanilla extract. You can adjust the amount of honey depending on how sweet you want your parfait to be.
  • Mix chia seeds into half of the yogurt mixture.
  • Slice the kiwi and banana.
  • In a clear, tall glass, start layering your ingredients. Start with a layer of yogurt followed by fruit slices, muesli and the chia seed yogurt mixture. 
  • Top with a generous sprinkle of nuts and a drizzle of honey.
  • Your parfait is ready to be served.

Sand Pudding

This delicious and fun-to-eat pudding dessert is an instant attention-grabber, perfect for parties. 

Ingredients

  • 1 packet of vanilla wafers
  • 1 Oreos
  • 226 gm cream cheese
  • 53 gm butter
  • 127 gm powdered sugar
  • 2 small packets of French vanilla instant pudding mix
  • 473 ml milk
  • 336 gm whipped cream

Instructions

  • In a food processor, pulse vanilla wafers and Oreos; the crumbs should resemble the texture of sand.
  • In a bowl, mix softened cream cheese, butter and sugar until the texture is smooth.
  • In another bowl, mix the vanilla pudding mix with milk. Then add the cream cheese mixture and mix well. 
  • Fold in the whipped cream.
  • In cups or any container resembling sand buckets, layer both the mixtures — start with a layer of sand followed by pudding and so on.
  • Allow the pudding to chill in the refrigerator for at least an hour before serving.
