Chocolate Cake
The goodness of chocolate and the boldness of coffee come together to create this rich, fudgy dessert.
Ingredients
For the cake:
- 169 gm almond flour
- 65 gm cocoa powder (unsweetened)
- 90 gm coconut flour
- 56 gm flaxseed meal
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp salt
- 107 gm butter (softened)
- 150 gm granulated sugar (keto-friendly)
- 4 large eggs
- 1 tsp pure vanilla extract
- 240 ml almond milk
- 50 ml brewed coffee (strong)
For the buttercream:
- 226 gm cream cheese (softened)
- 107 gm butter (softened)
- 150 gm granulated sugar (keto-friendly)
- 50 gm cocoa powder (unsweetened)
- 28 gm coconut flour
- ¼ tsp instant coffee powder
- 180 gm heavy cream
- A pinch of salt
Instructions
- Preheat your oven to 176°C; line two cake pans with parchment paper and grease with cooking spray.
- Whisk almond flour, cocoa powder, coconut flour, flaxseed meal, baking soda, baking powder and salt in a large bowl.
- In another bowl, using a hand mixer, beat butter and sugar until it turns light and fluffy. Add eggs, one at a time, followed by vanilla extract. Add the dry ingredient mixture to this and mix until just combined. Finally, stir in the milk and coffee.
- Divide the batter into the two cake pans and bake for 28 minutes. After baking, set the cakes aside to cool completely.
- To make the frosting, beat cream and butter in a bowl using a handheld mixer. Add sugar, cocoa powder, instant coffee and coconut flour and beat until the mixture is lump-free. Add cream and salt and mix until combined.
- On a cake stand, add your first layer of cake. Spread a thick layer of buttercream on top. Then add the second layer of cake. Cover the rest of the cake with buttercream frosting.
- Refrigerate the cake before serving.
Peanut Butter Cookies
This no bake dessert is so easy to make and will satisfy your sweet craving.
Ingredients
- 375 gm unsweetened peanut butter, melted (extra for drizzling)
- 150 gm coconut flour
- 50 gm keto-friendly brown sugar
- 1 tsp pure vanilla extract
- A pinch of salt
- 360 gm keto-friendly dark chocolate chips (melted)
- 1 tbsp coconut oil
Instructions
- In a bowl, mix coconut flour, peanut butter, sugar, salt and vanilla and combine until smooth.
- Line a baking sheet with parchment paper. Using a small cookie scoop, scoop small portions of the mixture into the baking sheet. Make sure to flatten them slightly. Freeze for about an hour.
- In a bowl, whisk melted chocolate and coconut oil.
- Using a fork, dip the frozen peanut butter rounds into the chocolate until fully covered and return them to the baking sheet. Drizzle the cookies with more peanut butter and freeze for about 10 minutes.
- Your peanut butter cookies are ready to be served.

Cookie Dough Bars
Another great no bake dessert recipe that’s a perfect midday pick-me-up to go along with your cup of coffee.
Ingredients
- 227 gm butter (softened)
- 127 gm keto-friendly confectioner’s sugar
- 1 tsp pure vanilla extract
- 1½ tsp salt
- 384 gm almond flour
- 540 gm keto-friendly dark chocolate chips (divided)
- 2 tbsp coconut oil
- Flaky sea salt
Ingredients
- Using a handheld mixer, beat butter, sugar, vanilla and salt until it turns light and fluffy. Incorporate almond flour. Then fold in 180 gm dark chocolate chips.
- Grease your baking pan with cooking spray and line it with parchment paper. Coat the parchment paper with cooking spray too. Evenly spread the cookie dough onto the pan.
- In a bowl, combine the rest of the dark chocolate chips and coconut oil and microwave until the texture turns smooth and pourable.
- Pour the mixture over the cookie dough layer. Garnish with flaky sea salt and freeze for at least two hours or overnight.
- Cut the cookie dough into bars and serve.
