This could be a little daunting for someone who is in the habit of regularly hosting lunch and dinner events at home, catering to friends with a range of food preferences. Rasmalai Tres Leches Cake
Perfect for the holidays or any occasion that warrants decadence, this baked dessert can be made ahead of time and stays fresh in the fridge for up to five days.
Ingredients:
For the cake:- 237 ml non-dairy milk (soy, oat or almond)
- 2 tbsp non-dairy yogurt or apple sauce
- 344 gm all-purpose flour
- 21 gm almond flour
- 41 gm sugar
- 1.5 tsp baking powder
- ¼ tsp baking soda
- 1 tsp apple cider vinegar or white vinegar
- 59 ml oil
- ½ tsp vanilla extract
- ½ tsp salt
- A few drops of almond extract
For the milk mixture:
- 2 tbsp pistachios
- 2 tbsp cashews
- 119 gm canned full-fat coconut milk (only the thin part)
- 59 ml oat milk or soy milk
- 2 tbsp water
- 3 tbsp sugar
- 1-8 saffron strands
- Seeds from a pod of one green cardamon
For the coconut cream topping:
- 117 gm thick coconut cream
- 2-3 tbsp powdered sugar
Instructions:
For the cake:
- Add all the wet ingredients in a bowl and mix well.
- Mix all the dry ingredients in a separate bowl and combine it with the wet ingredients mixture until you arrive at a cake batter consistency. Make sure that the batter isn’t too thick or too thin. If you end up with a thick batter, add 1 tbsp (or more) of milk. If the batter is too thin, add 1-2 tbsp of flour.
- Transfer the batter into an 8 x 8-inch or 9 x 9-inch greased pan.
- Pre-heat your oven to 180°C and bake the cake for 30 minutes. At the 25-minute mark, check the cake to see if it’s done. If not, let it continue to bake for the next 5 minutes.
For the milk mixture:
- For 30 minutes, refrigerate a can of full-fat coconut milk. Then scoop out the coconut cream and set it aside for the coconut cream topping. You will be left with the thin part of the coconut milk.
- Add 118 ml of the coconut milk into a blender along with the rest of the ingredients for the milk mixture. Blend until you arrive at a smooth texture.
- After the cake is baked, remove it from the pan and let it cool for 5 minutes. Using a toothpick, puncture holes all over it. Pour one-third of the milk mixture over the cake. Do this in 15-minute intervals, giving the cake enough time to absorb the coconut milk. If, after a point, the cake isn’t soaking up any more milk, then set the rest aside. You can serve it later on the side.
For the coconut cream topping:
- Whip up the coconut cream that you had set aside in the refrigerator until you arrive at a thin consistency.
- Then, add sugar and continue to whip until the cream is fluffy and light. At this point, you can add a little vanilla or cinnamon to the cream.
- Spread the cream over the milk-soaked cake, and garnish with crushed or chopped pistachios.
- This baked dessert is ready to be served!

Whole Wheat Date Balls

Ingredients:
- 28 gm whole wheat flour
- 1 tbsp vegan butter (or oil)
- 1 tbsp flax meal
- 2 tbsp almond flour
- ¼ tsp ground cardamon
- 2 tbsp unsalted cashews (chopped)
- 8-10 dates
- Generous pinch of salt
Instructions
- Roast the wheat flour on medium heat for 10-15 minutes. Make sure to stir it constantly, so that it doesn’t burn.
- Once the flour turns into a darker shade and releases a fragrant aroma, combine it with flax meal, almond flour, salt, butter and salt.
- Roast the mixture for 3-4 minutes on medium heat and set it aside.
- Combine the dates and cardamon in a food processor and blend until the dates have visibly shredded.
- To this, add the wheat flour mixture and cashews and blend until it is well combined. It should look like fat crumbs.
- Take a ball-sized amount of the mixture into your hand and shape it into a ball. If you notice the mixture isn’t sticking, add 1-2 dates, a sprinkle of water and blend it in the processor.
- Your whole wheat date balls are ready to be served.
