Lychee and matcha tiramisu
Tiramisu takes a tropical turn with layers of lychee and matcha! This fusion dessert brings together the earthy bitterness of matcha and the sweet, fragrant lychee, giving a whole new twist to a beloved classic.
Ingredients:
- 200 gm ladyfinger biscuits
- 200 ml strong matcha tea, cooled
- 250 gm mascarpone cheese
- 150 ml heavy cream
- 100 gm lychee flesh, chopped
- 50 gm sugar
- 5 ml vanilla extract
- 10 gm matcha powder for dusting
Procedure:
- Whip the heavy cream and sugar until it becomes soft, airy, and fluffy. Now fold in the mascarpone cheese and vanilla extract in it.
- Brew the matcha tea and cool it down to keep it aside. Once it is cooled, dip the ladyfingers in and set them in a serving dish.
- In the serving dish, layer the spread of the mascarpone mixture over the ladyfingers, followed by a layer of freshly chopped lychee. Keep repeating the process until it reaches the top of the dish.
- At the top, dust some matcha powders and refrigerate the dish for at least four hours.
Lychee pavlova
This dessert with lychee celebrates the delicate texture of meringue, paired with whipped cream and lychee for a stunningly beautiful and delicious creation.
Ingredients:
- 4 egg whites
- 200 gm caster sugar
- 5 ml white vinegar
- 5 gm cornstarch
- 250 ml heavy cream
- 150 gm lychee flesh, chopped
- 50 gm raspberries (optional for garnish)
Procedure:
- Start with preheating the oven to 120°C.
- In a bowl, beat the egg whites until they become soft and fluffy.
- Gradually add the caster sugar. Add one spoon at a time and whisk them together until the mixture becomes glossy.
- Once they are mixed, fold in the vinegar and cornstarch. That’s how you get your meringue.
- Once the meringue is ready, spoon them on a baking sheet lined with parchment paper. This will create a round base for the meringue.
- Bake it for an hour at 120°C. Once it is done, let it cool inside the oven.
- Now whip some heavy cream and place it as the meringue base. Then scatter the chopped lychee over the top to add more flavor.
- If you are feeling fancy, decorate the dessert with some chocolate covered strawberries on top. This will make the dessert richer.
- Serve them immediately to preserve the perfect crunch and creamy contrast!
Lychee and coconut panna cotta
Panna cotta is the most popular Italian dessert. But to make an infusion of this classic dessert, add some lychee. The combination of rich coconut and the subtle sweetness of lychee will be quite a tropical treat!
Ingredients:
- 400 ml coconut milk
- 150 gm fresh lychee flesh, puréed
- 80 gm sugar
- 5 gm agar-agar powder (or gelatin)
- 100 ml water
- 5 ml vanilla extract
Procedure:
- In a saucepan, add coconut milk and sugar. Put them on a medium heat and warm till the sugar dissolves.
- Separately dissolve agar agar powder with some water and heat it.
- Once the agar agar is completely mixed, add it to the coconut milk mixture and stir continuously.
- Once they are mixed, add the lychee puree and vanilla extract. The pureed lychee will add a different texture along with adding flavor to the dessert.
- Now pour the mixture into molds or fancy glasses where you will serve the panna cotta
- Refrigerate them for at least four hours before serving.
- Once out of the fridge, garnish it with toasted coconut and freshly chopped lychee.
