It has become a cherished tradition to bake a winter solstice cake and embrace the seasonal change.     Ingredients

For the cake

  • 2 cups shredded carrots
  • 3/4 cup unsweetened coconut (shredded)
  • 1 1/2 cups dark brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 tsp vanilla extract
  • 2 cups whole wheat pastry flour
  • 1 1/2 tsp baking powder
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1 tsp salt
  • 1/2 cup raisins
  • 1/2 cup walnuts, chopped
  • For the cream cheese frosting
  • 1/4 cup unsalted butter
  • 2 oz cream cheese, softened
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/2 cups powdered sugar
  • 1/4 cup unsweetened shredded coconut

For decoration

  • few sprigs rosemary

Method

  • Preheat the oven to 350°F. Grease and flour one 8-inch cake pan and keep it aside.
  • In a large mixing bowl, combine the carrots, coconut, sugar, oil, eggs, and vanilla extract.
  • In another mixing bowl, combine the wheat pastry flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  • Then incorporate the dry ingredients with the wet. Stir until well combined. Mix raisins and chopped walnuts.
  • Add the batter into the greased cake pan and bake for 35-40 minutes or until a knife inserted in the center of the cake comes out clean.
  • Let it cool completely and then proceed for frosting.
  • To prepare the frosting, whip the butter and cream cheese for about 3 minutes until light and fluffy. To the frosting add in the vanilla extract, salt, and powdered sugar.
  • Whip again to combine for about 2 minutes. Once the cake has cooled, remove it from the pan and frost with the prepared mixture.
  • Top with additional shredded coconut and decorate with rosemary pieces (if desired).
