Marshmallow Brownies

Want to add a fun element to an already beloved dessert? Try this recipe for marshmallow brownies that will appeal to kids and adults alike!

Ingredients

  • 518 gm brownie mix
  • 118 ml vegetable oil
  • 2 large eggs
  • 3 tbsp water
  • 6 crackers
  • 1½ cup mini marshmallows
  • 42 gm milk chocolate (chopped)

Instructions

  1. Preheat your oven to 175°C.
  2. In a bowl, combine the brownie mix, oil, eggs and water. Pour the batter into a greased 9 x 13-inch baking dish and bake for 15 minutes.
  3. While the brownies bake, start preparing the topping. In a bowl, mix crackers (broken into 1-inch pieces), marshmallows and chocolate. Give it a good toss.
  4. On the 15-minute mark, remove the brownies from the oven and evenly spread the topping over it. Place the baking dish back into the oven for another 7-10 minutes.
  5. Cut out square slices and enjoy!

Caramel Pretzel Brownies

Ingredients

  • 396 gm caramel toffees
  • 520 gm brownie mix
  • 118 ml vegetable oil
  • 59 ml water
  • 2 large eggs
  • 53 gm butter (unsalted)
  • 1 tbsp milk
  • 1 cup pretzels (chopped)
  • 140 gm chocolate chips

Instructions

  1. Preheat your oven to 175°C.
  2. In a bowl, combine the brownie mix, vegetable oil, water and eggs, and mix well.
  3. Pour the batter into a baking dish.
  4. Chop the caramel toffees into two halves. Take half of this portion and press them into the batter.
  5. Bake the brownies for 25-30 minutes.
  6. While the brownies bake, mix the remaining caramel toffees, butter and milk in a bowl and microwave at 30-second intervals, making sure to stir the mixture. Do this for about 1-3 minutes, until you achieve a thick sauce-like consistency.
  7. Once the brownies are ready, drizzle caramel sauce over it. Top it off with chopped pretzels and chocolate chips. Let it cool for 20 minutes.
  8. Your brownie is all set to be cut up and served!

Coconut Macaroon Brownies

Ingredients

  • 215 gm butter (softened)
  • 400 gm white sugar
  • 4 eggs
  • 1½ tsp vanilla extract
  • 250 gm all purpose flour
  • ¾ tsp cream of tartar
  • 58 gm Cadbury cocoa powder
  • 75 gm walnuts (chopped)
  • 4 cups coconut flakes (unsweetened)
  • 414 ml condensed milk (sweetened)
  • 1 tbsp vanilla extract

Instructions

  1. Preheat your oven to 175°C.
  2. In a large bowl, whisk butter and sugar to achieve a creamy consistency. Add eggs to the mix, one at a time, along with 1½ tsp vanilla extract. Then, add the flour, cream of tartar and cocoa powder and blend well. Finally, add walnuts to the batter.
  3. Pour half of the batter into a greased and floured baking pan.
  4. In another bowl, mix coconut flakes, sweetened condensed milk and 1 tbsp vanilla extract. Layer the mixture over the batter. Top it off with the leftover batter mixture. Use a spatula to make sure the batter is evenly spread.
  5. Bake for 45-50 minutes. Cool the brownie completely before cutting it up into bars.
