Crepes are paper thin round delicacies, made of flour, sugar, cocoa powder, eggs, butter and other ingredients. The batter is runny and is spread on the pan in a thin layer. For the Pancake:
- Flour – 1 Cup or 125 gms
- Sugar – 1 Tablespoon or 15 gms
- Salt – ¼ Teaspoon or 3.75 gms
- Cadbury Cocoa Powder – ¼ Cup or 30 gms
- Milk 1 ¼ Cups or 295 ml
- Eggs – 2 Medium size
- Vanilla extract – 1 Teaspoon or 5 m
- Unsalted butter – 2 tablespoon or 30 ml
For the Dressing:
- Cream Cheese – ¼ Cup or 60 gms
- Fresh fruits of your choice
Directions
In a bowl, mix all the ingredients - flour, sugar, salt and cocoa powder.
In a separate bowl, mix all the wet ingredients – Milk, eggs, and vanilla extract.
Add the wet ingredients into the dry ingredients and mix using hand whisk till the mixture is smooth.
Once mixed, melt the butter and add to the mixture and mix again thoroughly and let it rest for about 10 minutes.
Heat the frying pan on medium flame and pour the mixture on to the pan, making sure that the mixture spreads out evenly on the pan so that it forms a thin layer. Cook for about 2-3 minutes, then flip, and cook for another minute or so.
Take the cooked crepes, spread some cream cheese and top it with fresh fruits of your choice and fold and sprinkle some icing sugar on top for decoration if desired and serve hot.
TIPS:
Best to serve it hot. If a little sweeter crepe is preferred, one can use chocolate spread instead of cream cheese.
