For the Cupcake
- Unsalted butter – 1 cup
- Icing Sugar – 3/4 Cups
- Eggs – 2 medium sizes
- Flour – 3/4 Cups
- Fresh lemon juice – 15 ml
- Lemon zest – a few
- Baking powder – 2.5 ml
- Salt – a pinch
For the Ganache
- Cadbury Diary Milk Chocolate – 2/3 Cups
- Fresh Cream - 2/5 Cups
Directions
For the Cupcake:

In a clean bowl, sift in the icing sugar and beat it with the butter using handheld blender until pale yellow and puffy.

Add in 2 eggs and beat until well combined.

Sift in the flour and baking powder and mix well.

Add in lemon juice and lemon zest, mix until well combined.

Fill the cupcake mould with the batter and bake it in a pre-heated oven at 170˚ C for 20-25 minutes or until golden brown on the edges.
For the Ganache

Melt the chocolate using the microwave or double boiler method and add the fresh cream into the melted chocolate and stir till the chocolate and the cream is mixed and the texture is smooth with no lumps.

Once it is cooled down, whip the ganache using a hand-held blender until smooth and creamy.

Pipe this mixture on top of the baked cupcakes.
If salted butter is used, do not add salt separately.
