Take the Oreo Cookies and split them in half.
Take a rimmed baking sheet covered with parchment paper. Take the six cookie halves that don’t have any creme filling. Place them upside down on the sheet.
Add one tablespoon of cookies and cream ice cream to each cookie.
Cover it with the remaining cookie half, creme side down, so it makes a sandwich. Gently press it into the ice cream, so it stays firm.
One at a time, partially dip the cookie sandwiches into the melted semi-sweet baking chocolate.
Take it out and shake it gently to remove the excess chocolate.
Place the sandwiches, in a single layer, on the prepared baking sheet. Top it up with the multi-coloured sprinkles.
Freeze for an hour or until the chocolate coating is firm.
