Watermelon Mousse
Fruity, light and refreshing, this watermelon dessert is perfect for date night at home. It takes all of 20 minutes to make!
Ingredients
- 473 ml watermelon juice
- ½ tbsp gelatin
- 66 gm sugar
- 10-15 fresh mint leaves
- A big pinch of salt
- 1 tbsp lemon juice
- 120 gm whipping cream
- Grated Cadbury dark chocolate (for garnishing)
Instructions
- In a bowl, add 118 ml watermelon and gelatin. Let it soak for about 10-15 minutes.
- In a blender, add the remaining watermelon juice and mint leaves, and blend. Then add sugar, salt and lemon juice and mix well.
- Place the bowl of the gelatin mixture over hot water and stir until it dissolves. Add it to the watermelon and juice mixture and stir well.
- Whip the cream till it forms soft peaks.
- Add the whipped cream to the watermelon juice and whisk lightly till the cream is well combined.
- Pour the mixture into serving bowls and place them in the fridge to set overnight.
- Serve with grated chocolate.
Watermelon Mint Sorbet
Nothing is as refreshing as a watermelon mint sorbet on a hot, humid day. This fruity summer dessert is great for pool parties.
Ingredients
- 1814 gm watermelon (cut into chunks)
- 1 tbsp + 1 tsp sugar
- 3 limes (juiced)
- A pinch of salt
- 1 tbsp + 1 tsp mint leaves (chopped)
Instructions
- In a blender, add watermelon chunks and lime juice and blend.
- Then add mint and blend until the mint leaves are shredded.
- Chill the mixture in the refrigerator for 30 minutes.
- Pour the mixture into an ice cream maker and churn till you achieve a sorbet-like consistency.
- Transfer it to an airtight container and freeze for a couple of hours.
- Before serving, let the sorbet sit out for 20 minutes so that it’s easily scoopable.

Instructions

- Using the double boiler method, melt chocolate and coconut oil.
