- 122 ml vegetable oil
- 3 eggs
- 125 ml buttermilk
Method:
- First, you have to preheat the oven to 180°C. Remember to always position a rack in the center of your oven so that your cake bakes evenly.
- Then, you have to whisk together flour, sugar, salt, baking powder, cinnamon, nutmeg, and ginger in a bowl.
- Now, you have to whisk together pumpkin puree, vegetable oil, eggs, and buttermilk until smooth in another bowl.
- Next, you need to fold the wet ingredients into the dry ones till they are combined, but be careful so that it is not overmixed. With pumpkin bread, you want the texture to resemble cake more than bread.
- After that, you can pour the batter into a greased loaf pan.
- Next, you have to bake it for 50-60 minutes.
- Let it cool in the pan for 10 minutes, and then transfer from the pan to a wire rack and let it cool completely.

- 135 gm buttercream
Method:
- First, you have to preheat the oven to 200°C, and line a muffin tin with paper liners.
- Then, you have to sift together flour, sugar, salt, and baking powder, making sure to get all of the dry ingredients well integrated.
- Now, you have to whisk together melted butter, milk, eggs, and vanilla extract until everything is a homogeneous mix.
- Next, you have to add the wet ingredients slowly to the dry mixture, and mix until they are combined. Here too, the aim is to not overmix the ingredients.
- After that, you can divide the muffin batter evenly among the muffin cups, and bake for 20-25 minutes or slightly more.
- Now, you have to remove the muffins from the oven, and let them cool in the pan for 5 minutes.
