Ingredients

  • 1 liter full cream milk
  • ¼ cup basmati rice (soaked & ground)
  • ½ cup sugar (adjust as per taste)
  • 50 grams Bournville dark chocolate (grated or melted)
  • 10-12 saffron strands (kesar soaked in 2 tbsp warm milk)
  • ½ tsp cardamom powder
  • 2 tbsp chopped nuts (almonds, pistachios)
  • ½ tsp rose water (optional)
  • Silver varq (for garnish) optional

Method

  1. Rinse and soak ¼ cup basmati rice for 30 minutes. Drain and grind it into a coarse paste using a little water. Keep aside.
  2. In a big pan, heat 1 liter full cream milk on medium flame. Stir occasionally to prevent sticking and bring it to a boil.
  3. Add the ground rice paste to the boiling milk, stirring continuously to prevent lumps.
  4. Simmer on low flame for 10-12 minutes until the rice is fully cooked and the mixture thickens.
  5. Mix in ½ cup sugar, soaked saffron milk and ½ tsp cardamom powder. Stir well. Cook for 5 minutes until the sugar is dissolved and the flavors blend.
  6. Lower the flame and add grated/melted Bournville dark chocolate. Stir until the chocolate is melted and mixed well.
  7. Switch off the flame and let it cool a bit. Add ½ tsp rose water for a nice aroma.
  8. Pour into earthen bowls and refrigerate for 2-3 hours. Top with chopped nuts and silver varq and serve it cold for the best flavor.
